This covers an Ironman Outdoors Retreat where we cooked for 4 days. We highlight several meals but focus on Catch Clean Cook wild hog on the Pit Boss Smoker. We were tired so the video is not the best but we hope you enjoy.
We skinned the hog, cleaned real well. Placed in a cooler with 1 lb of pickling salt per 4 gallons of water. Just covered the hog good. Then cut 6 oranges in half and placed in water. Added 3 large bags of ice. Let sit for 6 hours, drained and repeated process. Total time in water was 16 hours.
Took out of water, patted dry, injected hog with 1/2 Cider Vinegar and 1/2 Apple juice with rub blended in. Once injected, rubbed hog down with our favorite rub. Placed on tin foil in Pit Boss for 2 hours, flipped and 2 hours later checked on it. We wrapped after 5 hours and got to desired temp. We cooked at 225 on Pit Boss using hardwood blend.
