Bacon and Cheddar Cheese Sausage Recipe. Cheddar Cheese and Bacon Sausage: The combination of cheddar cheese and bacon is a delicious mix and very popular in many dishes. The aged cheddar cheese has a rich flavor with a slight acidity, while the bacon adds a smoky flavor. Together, the cheddar cheese and bacon create an irresistible flavor contrast.
This combination is used in many dishes, including hamburgers, sandwiches, pizza, baked potatoes, macaroni and cheese, and many others. Nothing more natural than transferring this combination to a sausage at a barbecue with friends and family.
Bacon and Cheddar Cheese Sausage Ingredients
700 g pork leg;
200 g bacon;
100 g matured English cheddar cheese (hard cheese);
8 g salt;
2 g salt with nitrite(93,75% salt + 6,25% nitrite);
2 g antioxidant with erythorbate;
2 g ground white pepper;
100 ml cold water;
2 meters of pork intestine(diameter 28 to 32 mm).
Cooking Bacon and Cheddar Cheese Sausage
Cut the pork into small pieces and pass through the meat grinder or, if you don't have a grinder, chop finely with a knife;
Cut the bacon and cheddar cheese into small pieces;
Mix the meat and bacon well with all the seasonings until smooth and well combined. Meat has to be sticky, sticky;
Add the cheese and mix slowly with a spoon, so as not to break up;
Put it in the pork intestine using specific equipment for sausages or use a wide funnel;
Leave it in the fridge for at least 12 hours before baking;
Roast on a charcoal grill over medium heat for even better flavor.

Thank you, Warren! The antioxidant with erythorbate accelerates the nitrite conversion, anyway a 12 hours gap between adding the curing salt and cooking is a good delay. I´ll try to remember to describe this on next vids.
