This is one of my FAVORITE Canning Recipes!! My Home canned Zucchini Relish that I have had for over 50 years. It is so good with almost everything!!
Zucchini Relish
Full Recipe (I made 1/2 recipe in video)
10 cups ground zucchini
4 cups ground onions
5 TBSP pure granulated salt
2 1/4 cups vinegar
4 + 1/2 cups sugar
1 TBSP nutmeg
1 TBSP dry mustard
1 TBSP turmeric
1 TBSP cornstarch
1/2 tsp pepper
2 tsp celery salt
1 sweet green pepper chopped fine
1 red pepper chopped fine
Put first three ingred in large bowl and mix well. Cover and stand overnight in refrig. Next day drain with cold water several times. Put into large kettle with remaining ingred. Bring to boil and simmer, uncovered, stirring occasionally, for 30 mins or until mixture reaches desired consistency. Pour into six to eight sterilized jars and seal. Process in water bath for five minutes. (I did 10 mins)
