Would You Try Airag?

Great Big Story

If you’re a fan of kefir and yogurt, you might be excited to try ‘airag’, a traditional Mongolian drink made from fermenting mare's milk.
The process has remained largely unchanged since the 13th century, and the fermentation process gives it a slightly sour taste with an alcohol content of over 2%. So, maybe this one's not for your breakfast table...
It’s hard to find outside of Mongolia, but Beryl Shereshewsky has tracked it down for a taste-test.

This is fascinating. I remember watching a video about the food Yakut people eat, and saw that the Yakuts also have their own fermented mare milk drink called ‘kumis’. It’s interesting how similar so many Central-North Asian societies are!

I lived in Mongolia for many years, since at the time I was training to become a professional sumo wrestler and my mentor, who was from the rural regions, invited me to stay and train in the country with its many talented bokh practitioners (Mongolian traditional stand up wrestling) and its always so comforting to see Mongolian culture and especially food show up here and then wherever I go. Airag was something that I drank as much as water and shiguderi (milk vodka). Also little tip for anyone who wants to try Mongolian cuisine, give khuushuur (dumplings deep fried in lard), khorkhog (a type of traditional Mongolian hot stone barbecue) and tsuivan (Mongolian stir fried noodles, usually with mutton or horse) a try, as well as buuz (steamed dumplings often filled with meat). They're probably the most famous dishes from the country.

I have tried this drink, airag, in Mongolia because I was in the Peace Corps there in 2010. I found it to be very hard to stomach, except for one time when it was prepared for Western tourists and it tasted like plain yogurt mixed with club soda. I actually prefer the distilled version which tends to remove the chunks; even though I don't like the higher alcohol content, it tends to go down more easily.

My partner is a Swiss, and he introduced me to cheese fondue. Unlike American Style cheese fondue, this has a very unique and interesting aroma. It did some getting used to and believe me, my first attempt was less than dismal. However, after giving it second, third and fourth try over several months, I am now so hooked onto it, that I prefer cheese fondue over meat fondue. You just gotta give these types of food more than one try.

Many Mongols are accustomed to drinking airag. They do not have a cow about the drink's taste. They adore the nationally exclusive protein because it is delicious! And it renders skeletal fortification!🥛

Fascinating! This, along with the Tibetan yak butter tea, are things I would happily try given a chance. I am allergic to cow's milk but have no issue with goat and sheep, and so I suspect horse and yak milk would be ok as well. My taste buds are adventurous far beyond my actual ability to travel, unfortunately. 😋😉😁

Fermented milk is a tough route because if you drink fresh milk, you've already spent years ready to immediately reject milk that is slightly old. I don't even like yogurt drinks or kombucha. Not good with the sour fermented drinks. But I try anything and I like some out there stuff. I would guess it would take some getting used to. Maybe try it sweetened first or mix in some vodka.

Love when anything Mongolian pops up on your channels! I lived in Mongolia for 5 years. The curd taste and fermented food is very different from what we are used to in the west. This is a flavor profile they literally get as babies when they suck on dried curds. It took me a while to get there but I miss it so.
