Apologies to all my fellow Yorkshiremen (except those who live in Sheffield). I never actually buy fishcakes at the chippy, so I believed a couple of articles that claimed these were Sheffield things. Hangs head in shame.

In the North East they are known as Fish Patties, almost all Chippies sell them. I love them whatever you want to call them 👍

The potato fritters are standard in Australia at every fish and chip shop and are called scallops. The battered pineapple and banana fritters are also common. The best being crumbed with cinnamon sugar and served with ice cream!

Aye Keef, as a Barnsley lad, I can tell ya, Yorkshire fishcakes are summat special. Fish sandwiched 'twixt two slices of tater, battered and fried - proper comfort food, that. Calling 'em 'Sheffield' fishcakes? That's a laugh. We all know they’re Yorkshire through and through. And fritters? Whether it's a tater or a cheeky pineapple, they’re bang on. Love that you're sharing these recipes. Nowt beats a homemade Yorkshire fishcake!

Beef dripping with the jellified juices...spread some (loads) on a slice of white bread with a pinch of salt, heaven. In my first job back in 1966 I was sent every morning to the canteen with an order for about 15 slices! Those were the days.

All the chippies around Morley, Batley, Dewsbury and Wakefield (no distance from Leeds) sold proper fishcakes, in the 60's & 70's they were the only ones available, but it had to be haddock, cod was thought to be watery in comparison. My mum used to meet her friend Doreen fr lunch each Friday in the 70's and 80's at the New Happy Swan(?) chinese restaurant, I think it was above an arcade in Briggate somewhere near Littlewoods. She would always have Chicken Maryland (never tried a chinese dish) with pineapple fritters. I don't recall seeing them in the chippie at all, though I have been gone for over 40 years.

In Victoria, Australia the Potato fritters are a very popular and standard item, but we call them potato cakes. There are State differences in the name for these. The pineapple fritters were also a standard item, perhaps not so much nowadays. Every Chinese restaurant would serve either pineapple or banana fritters as a sweet with syrup and ice cream. Years ago some of the local fish and chip shops - particularly those owned by English migrants to Australia would make this version of the fish cake and I hadn't had one for decades. Delighted to find your video. Thank you. Some of your other recipes look good as well. Subscribed !

Great stuff. I wondered if the potato would be cooked, well done. Loved the talk about the beef dripping, and you’re bang on. It’s so expensive from a butcher but the juicy stuff at the bottom is wonderful.

my local chip shop in southern Australia about a century ago had something called a 'hamburger' which was exactly this recipe but a burger pattie instead of fish. Back then it was migrants from Greece that ran all the chip shops, but the whole idea was transplanted from Old Albion I reckon. All the chips were hand cut. The quality was more variable than today but there was fun to be had sorting through the newspaper wrapped package for the best bits ..

Love Sheffield fish cakes. Scarborough does the beef dripping fresh ones. On the point of fritter or scallop. To me a fritter is made with mashed potatoes covered in breadcrumbs and a scallop is whole sliced potato in batter. I’m 60 now and that’s how they were called back in my childhood and youth, not sure about nowadays things change. As to batter, another way I do it other than beer Or bicarbonate of soda is to use chilled fizzy water, just remember to season it well. If I’m also in a certain mood I add a pinch of the dreaded unspoken of monosodium glutamate. Beef dripping blocks from Morrison’s as been my way for a number of years just remember to use a pan like yours and not a deep fat fryer. It melts to slowly to keep the element submerged causing the thing to burn out. It took me two fryers to give up on that. I even tried 80% beef dripping and 20 oil but trust me that’s no good either x

Keef, certainly one I will be trying. “She whom must be obeyed” nearly always has pineapple fritters from the chip shop but yours look so much nicer. If I could make future a vlog suggestion to you, when I was a kid (to many years to remember) my gran used to make the most amazing Pigs Fry. Unfortunately, when she passed the recipe went with her! I remember there being pig lungs, heart, kidney and bits of pork trim in it in the most gorgeous thick sauce. I’ve tried to find recipes but to no avail. Help us out and see what you can achieve please. Keep up the great work buddy.

I've never heard of em called Sheffield Fishcakes either! As far as I'm concerned they are all over the place in just about every fish and chip shop I know and that includes what once was called the famous 'Harry Ramsdens' at white cross Guiseley, I've also seen em in Leeds too, I originate from York and they are the patty type or used to be over there. Try Bradford, Otley, Yeadon, Guiseley, Keighley, Skipton etc, certainaly everywhere in the Aire and Wharfe Valley's all the way over to the Lancashire border and you'd be hard pressed NOT to find them. How far north and south they are available I don't know. Well done Keefy, you and Mrs Keef made my mouth water!

Hanging my head in shame, I confess I've never even tried to get a fish cake from a chippy. The incorrect info about them being a Sheffield thing came from a couple of websites. I bought a fishcake from my local chippy (in Leeds) and, yup, proper Yorkshire fishcake, not quite the size of a rugby ball, containing 2 slices of potato and some fish. Marvellous it was!

The battered potatoes are scallops, not fritters. But pronounced "skollops" not "skallops". We had then ask the time when I was a kid. And I don't know which fish and chip shops you've been in, but I've never been in one in Yorkshire that doesn't do these. I love them. Thank you for the video 😁

Just come across your channel after searching to see how I make fish patties, thank you so much for sharing and going to have a go at making these. Remembered buying fish patties with sliced potato (rather than minced fish & potato together fwhich apparently are called fish cakes) from a fish shop years ago but my local area doesnt make them. Nice easy video to follow 🙂

Late to the party, here, but you don't have proper fishcakes in Leeds!?!? Wow! I live near Wakefield in the Five Towns - less than a dozen miles from Leeds - and the "Yorkshire" fishcakes are just "fishcakes" in every chippy! Some chippies have an option for "parsley" fishcakes or "patties", but I've never come across anybody barmy enough to buy one. I am utterly astounded that they are South Yorkshire thing and not a generic Northern thing. You learn something new every day.

Tony - I'm guessing you didn't see my pinned comment. Basically, I was massively misled by a couple of Sheffield blogs/articles that claimed these as their own. I never actually buy fishcakes at the chippy, but I did try a few chippies after releasing this video. And of course they were what I showed here. So I guess the lesson is to be wary of anything a Sheffielder tells you.

Hey Keef! Cheap dripping is just that, no traceability, could have every chemical under the sun in it - avoid like the plague. A trusted butcher will sell you raw fat from a known source for about a quid a kg. If you get beef fat and render it yourself, you will get tallow (for a lot less than the ridiculously priced “organically-sourced” stuff on Amazon for example) and insanely good scratchings. The rendered fat is hard at room temp, heart-healthy (unlike vegetable oils), can be used multiple times and will keep at room temperature for months. It’s brilliant for fryers too, but best to heat them on low until the hardened block of fat is fully melted and the element won’t burn it.The tallow can be cranked to about 185~190C max. Once you have it, you won’t use anything else. Cheers and thanks for the great vids.

Yep this was my favourite from fish shop when I was growing up,they don’t do them now I don’t think but yeah this takes me back Keef 👍🏻well uncut fresh bread with good dripping from bakery is the best mmm.The scallops is something that make at least once a month,my dogs are in love with them too & so was mi Mam RIP X

I haven't lived in Yorkshire since the eighties but I remember "proper" fishcakes from all across Yorkshire including Leeds. I do miss them and the weedy pulped mashed up potato and fish in breadcrumbs type fishcakes punted out in supermarkets around the UK annoy me. Fritters are Spam in batter, nice to hear a Scallop getting a mention.

I can't believe you can't get a 'Yorkshire' fishcake in Leeds, I used to at nash's on old briggate. Haven't been for years but I know you can get em in surrounding areas. I recommend parkside, Normanton, drake's, Knaresborough & golden bite, boroughbridge

The chip shop in Beeston, LS11 does Yorkshire fishcakes. It's 30 years since I lived there though and it only opened for a short time a few times a week. There were queues across the green.

Waaaaaay down south (in Coventry) we call battered/fried potato discs "Scallops" (although we pronounce it Scoh-lupp). I think the "Scallop Batch" is a bona fide Coventry delicacy :D

It is possible to make apple or pear fritters, or cut the apples or pears into chunks, batter them and cook the same way. When I lived in Australia, Chinese restaurants served banana fritters by peeling the banana, cutting each in half from end to end, then battering and frying them served with ice cream or syrup. They still serve banana fritters here in Oz, also pineapple fritters and apple fritters. Just core the apple and treat the same way as Keef cooked his fritters.

This looks good. I recall in my foramtive years the chippy near the Dance hall did Fritters when there was a potao shortage but that was in the mid-60's. I still crave them though.

Bradford fishcakes was a staple for us as kids, parents had fish kids had fishcakes BTW i have bought them in Leeds as well

Glad to see the differentiation Keef. I’m from Sheffield ( though now live in Cleethorpes) what people outside Sheffield refer to as fish cakes we know as rissoles. Needless to say when I left home at 18 and went to college I was shocked when ordering a fish cake to get a rissoles. ( I don’t mind eating either having said that) forgot to say people in Sheffield tend to only like Cod, people here in Cleethorpes ( as many of them in the past worked in the fish processing industry ( I live just up the road from where the old Birdseye factory used to be and one of the Young’s Seafood Plants isn’t far away) and won’t eat cod. Personally I prefer haddock

I was wrong in this video to say these fishcakes are only found in Sheffield (relied on a heavily-biased blog post about it). This type of fishcake is common all over Yorkshire.

They are in Leeds! I live in Ossett and they are all over Ossett and Wakefield too. I had a girlfriend from Surrey and when I used to travel down there, their fishcakes were cheap and horrible frozen ones in most places.

@@PlanetKeef No need to apologise! They are by far superior fishcakes to the southern versions though in my opinion. In fact the proper fishcakes as I call them stop as soon as you get as far as Nottingham which surprised me at the time as it is still northern. But it makes sense now knowing they are Yorkshire fishcakes!

Stephen Brady lived in Leeds, wished in Leeds, never found a single chippy that sells a Sheffield Fishcake, not doubting they exist, but in Sheffield they are in 99% of them, BECAUSE THEY ARE SHEFFIELD FISHCAKES 🤣😂 this Yorkshire Fishcake nonsense is sacrilege

Never heard them called Sheffield fish cakes,I am from Leeds originally and they are the only fish cakes I know that are sold in the chip shops,been eating them since I was a kid (dad got the fish,kids got fish cakes) In a fish shop they are fried in with the chips at the same time

Only mistake you made Keef was when ready to assemble cakes and put them in batter. Put a splash of vinegar into batter and it will fizz up because of the baking soda and make batter lighter, all Sheffield chip shops do this.

Salmon?! you posh get! I make mine from Pollack or Ling, the cheaper cuts thy knows. There's a place in Halifax does proper good chats - spud slices in batter. I come over Leeds now and then, it's reet posh in places.

There was a chippy selling these in York when I was growing up. You had to be there when it opened as these sold like hot cakes. They were called Scallops.

As I understand it, scallops are just a slice of potato deep-fried in batter - no fish involved.

Keefybaby-will have a go at these, I think I've got some haddock in the freezer. My mother in law came from Heeley in Sheffield, so I may get a brownie point from the old chap! By the way, we in the Midlands call the potato fritters Klondikes. Speak soon x

What about the seasoning that goes between the fish and potatoes - this is what gives it the great Yorkshire taste - it was a bit mushy and peppery. I've lived in New Zealand for 13 years and miss my favourite takeaway!

That's the first time I've seen scallops in years! There's a chippie just down the road from me that used to do a special when I was growing up, a small tray of chips topped with your sauce of choice and 3 small scallops balanced on top, all for £1.00... Now I'm wondering if they still have that deal on and how quickly I can get down there! Great video, might have to give the scallops a go at some point.

Hi chef watched video and it reminded me of a batter thingie me nan done for us called door knockers as she called them it was a jam butty with the crust cut of cut into to like fish fingers dipped in batter and Cooked they where awsome just wonderd if you had herd of them under a diffrent name

We called them scallops and they where great with brown sauce or salt and vinegar. Charlie eats pineapple sandwiches with mayo I was ughhhhh but my mum tried them and loved it 😲

yes, I think years of eating field rations on maneuvers in the marine corps did something to how he eats as some weird things in MRE's and quid a bit of swapping items with your buddies went on in the woods.

These are NOT exclusively a Yorkshire thing and have been made in the North East as long as I can remember and I am fast approaching 70. They are called either Fish Scallops or Fish Patties, usually the latter I would think.

I've tried one from chippy shop in one of the Sheffield Village and that was amazing..this fake fish cakes in London are miles from real English Fish Cakes.

Thanks Keef...Over on the correct side of the Pennines (Lancashire) we have things called John Bulls. Similar concept to the YFC but made with mincemeat centre. Would be good if you make a vid on those

@@Keefcooks The only place in Blackburn that do them nowadays is www.hollytreefishandchips.co.uk/menu.html ..Not sure of the exact recipe and not had one for donkeys years. One to add to the list maybe. Their battered black pudding looks like a winner too.

Word of caution: the name 'fishcake' will mean different things in different parts of Yorkshire. In & around York, for example, a fishcake is like the frozen fishcakes you get at the supermarket. To get these 'sandwich' fishcakes, you ask for fish scallops.
