You are not going to believe what this vegan bacon is made of! Baconnaise!

And what if I told you you can add some bacon to your potato salad so it gets this smoky, rich and complex taste to it, and you can actually add it guilt free, because this bacon is actually plant based and free from harm and much healthier?
INGREDIENTS:
Three large potatoes
Salt to taste
1/3 of a cup of crispy onions
FOR THE MAYO:
100 mils of unsweetened vegetable milk
Salt to taste
Black pepper to taste
1/2tablespoon of lemon juice
A quarter tablespoon of yellow mustard
Other ingredients:
Vegetable oil
Fresh parsley, or dill, or both - minced
METHOD:
Wash and cut the potatoes into smaller pieces, so they cook faster.
Add them to a pot with water and some salt; bring the potatoes to a boil and then to a simmer and cook until they are soft.
For the Mayonnaise:
Add the plant-based milk to a blender then slowly pour the vegetable oil, turn on the blender and when the mayonnaise is thicker but not too thick, add the remainder of the ingredients.
If your mayonnaise turns out too thick add a little bit more olive oil or vegetable oil, and do not blend it anymore. Just mix to combine the oil with the mayo
Add the crispy onions to a small bowl then add a quarter tablespoon of liquid smoke, stir, and place it in the microwave for one minute but check if it’s already dry after 30 seconds then mix the crispy onions around so they don’t stick together and set aside.
When the potatoes are ready, turn off the stove, drain the water, set the potatoes aside, and when they are cold enough to be handled, peel them and cut them into smaller cubes then add the chopped fresh parsley or dill, or both to the potatoes along with the mayonnaise and gently mix everything around.
You can finish up with a drizzle of olive oil for extra taste, and right before serving add some crunchy onions on top so you have more texture and extra smokiness.

It's the lecithin in soymilk that creates mayo emulsion. Can measure out oil and soya in beaker; start with stick blender at bottom. Raise while wizzing just til floating oil gets pulled down slowly. I've also had luck with bullet type blender by adding pinch of guar gum. Any big difference in temp between oil and liquid can cause failure. Boiling potato in skin prevents sogginess. Halve immediately after draining. Peel asap. Acid and flavor can now be absorbed: chili in vinegar for example. Then the mayo will be creamy binding once well cooled.

Oh my it’s so simple.. I’ve seen sooo many bacon replacements & literally never thought to use crispy onions.. the caramelization, the crunch, you’re a genius!! (: You’ve got me thinking about using a little maple syrup & an apple wood smoker on this recipe, maybe a touch of smoked paprika for color? I use refined coconut oil, maple syrup & liquid smoke & a sprinkle of salt to make a really delicious bacon fat replacement & roll it into tortillas (: if you haven’t tried you must! And I have to add I adore your accent jana it’s so soothing & you are so beautiful & vibrant!! Your videos always put me in a good mood & you never cease to inspire
