@@jjk2one Consumption of estragole from herbal medicinal products is MOST LIKELY SAFE because the dose of the compound is not high enough. That being said, the benefits of herbal supplements are largely unfounded so I wouldn't waste money on them. I am not just a doctor on the internet, I play one in real life too!

Basil is its most "Basiliness" with minimal cooking however fresh basil cooked in a sauce at the start is noticably different than dried basil at the start, in termsof basil flavour and floralness.

Hard agree on this, cilantro is widely used in Indian cooking and we always leave it on as a garnish at the very end. I even chop up the stalk and add at the very end for the fragrance & slight herby crunch. Almost never made sense to cook it through, and even if we wanted to, we just go for a coriander powder or the whole coriander seeds roasted. Great tip, Ethan!

Exactly. In every single dish I have made, cilantro, parsley, and chives are typically used at the very end, or mixed into things that you don’t cook. I can’t even recall what cooked cilantro looks like.

I used fresh basil for the first time to garnish spaghetti bolognese I made for the house and biting in to that freshness was incredible. I had no idea it would make such a difference. I was so used to using dried basil for my sauces.

Everyone should just grow their own basil. It's super easy to grow, you can clone and propagate it forever. Pick it whenever you want. It loves being pruned. Get your Thai basil with your pho next time, save a piece and put it in water, keep it there until it roots, then plant in the garden or a container.

I think that depends very much on where in the world you live, as Ethan said basil is very sensitive to cold. For a few of the summer it can survive on our window ledge but it doesn’t thrive and then autumn comes round & it shrivels away.

I also use this principle for garlic. Adding even half a grated garlic glove right before the end makes such a pleasent difference as opposed to cooking them from the start!

That’s not quite the same. Cooked garlic is great too, just different. Sweeter and less pungent. Not to say cooked or raw garlic is better, just that they’re different. Basil is basically always better fresh.

@@swimfan752 that's very true, roasted garlic is something very delicous! But I feel like this also gets sort of lost in the cooking process combing it with sauces or dishes. The sweetness of roasted garlic also punches more if added later on, as far as I can tell that is. But thanks for pointing it out!

This doesn't mean one method is wrong or right, after all cooking is an art form. I just feel like adding it afterwards helps me personally save a glove or two :-)

From watching other other RU-vid videos, you can also remove the sprouting portion of the garlic clove to avoid introducing "vulgar" flavors, lol. Italian RU-vidrs also often cook with garlic to infuse a sauce, but they remove the whole cooked clove at the end.

@@littlebigfan34 Yes Not 100% sure but the sulfur compounds in garlic break down after cooling leading to a more mellowed taste. But some people like the flavour better that way. I try to get the best of both worlds by first just add some at start just to flavour the oil with garlic and finish with some Garlic for that garlic flavour.

I recently figured out a way to keep my basil fresh for a long time. I store it covering it with olive oil and putting the whole thing in the fridge. Not only the olive oil gets great basil flavor, but the leaves remain quite flavorful so I just have to put a spoon full of it on my tomatoes with fresh mozzarella Di bufala and I'm ready to go.

I totally agree with what you say Olivier, long time ago, my brother came back at Paris from Corsica, in is luggage, he have à bottle of olive oil with inside à basil leaf, and the taste of this olive oil mixed/maried with the basil, is absolutly marvelous.

Great video! It is worth noting that basil weakens in taste when it flowers, so it is good idea to cut off forming buds to retain the taste - the earlier the better, best before blooming.

Excellent presentation. One more rest: how big would the difference in taste be if you stored the basil in water on the refrigerator? The temp below 50° C is mostly about growing basil, so I’d be curious to see how storing it in water in the refrigerator would be compared to in water at room temp. Thanks fir your channel.

Great info! My favorite basil-centric recipe is Thai pad krapow gai. Such a killer dish, and very easy to put together. One day maybe I'll get to try the OG recipe with holy basil, but a metric buttload of normal basil really rocks it anyway.

Honestly I just love leafy aromatics raw far more than in any other form. I try to grow them on my balcony, currently working on a bush of rosemary, though it seems to be taking its sweet boffing time.

I mostly agree with the lists of herbs and cooking times, but I kind of like rosemary very lightly cooked if at all. I've cooked it in butter for a few minutes and don't notice the flavor that much, but as a garnish I like it better.

Since growing my own basil in the garden and using it a lot in cooking, I've come to the same conclusion. When making Thai type stir fries using lots of basil, I now add it when the stir fry is basically cooked, along with scallion greens, and toss it 10-15 seconds and serve. I am using less basil as a result because it's VERY pronounced. Don't want to completely overpower the other flavors! Also, frozen basil is way better than dried. It's not in the same class as fresh, but it's still aromatic and fresher tasting than dried by even more than the comparison from frozen to fresh. I toss whole leaves/stems into a ziploc bad and drop that in freezer. They leaves freeze individually if they aren't packed tight and I can grab out what I need and it defrosts on my cutting board in about one minute. Yeah, it's limp, but maybe the quick freezing (from not being packed) is preserving more of the aromatics. I don't recommend letting it sit long before using once defrosted though. Good video. I am looking forward to playing with more Mediterranean spices now that I have those established too. I just wish cilantro didn't up and bolt and die so fast here in panhandle Florida!

Try culantro instead of cilantro. I'm in central Florida and have the same problem with cilantro, it doesn't want to stay leafy for long.

Basil, by far, is the ultimate king of fresh herbs. You have to keep it alive to keep it fresh. It's by far the highest thing on my 'grow at home list'. You can grow it almost anywhere, and use it with almost anything. I have a 50cmx3m raised bed under the kitchen window which i use exclusively just for basil. I absolutely love fresh basil. It has to be fresh, and it needs to be raw or almost raw. it's like pesto - make it fresh, use it immediately. it can't be stored for long - it loses the peak of the flavour of the basil in like, 45 minutes.

I got addicted to what I think is Thai Basil from eating Vietnamese Pho. This one place has the absolute best Basil and I think it is Thai Basil because it has those purple stems. It is absolutely delicious. The one problem is that I cannot source it anywhere in my local area ( SF Bay peninsula area ) even though the Vietnamese restaurants all have it, and I cannot for the life of me get it to grow locally. Do you now anything about this? If you have not had it, you definitely need to try it because it is so much better than Italian Basil. Also it explains why they garnish the soup/pho by putting the Basil on top of it instead of cooking it in. Same with the Vietnamese spring rolls. The best food in the world.

Kitchen herb video requested! Over the years ive attempted basil, thyme and other herbs but after moving into an apartment its not as easy as using big pots and getting lots of sun.

My biggest problem is that I grow basil in a hydroponic system in my apartment. I like making pesto, but it's tricky to have it all grow enough for me to trim off enough to get a reasonable amount of pesto from it. I have taken to blanching the leaves before freeze, and I will confess, there is lose of some of the sharpness of the taste. Just cant win I suppose.

Yeah pesto requires a ton of basil. I make lots of pesto and I’ll just grab a bunch at the farmers market when I make some cus I’d have to strip my entire basil plant otherwise

i wonder if there is a way to extra the oils from basil without damaging it. so that you can just add a drop to a sauce and get that basil flavor without having to take up space with a plant.

Have you ever looked into making basil oil? The end result is not a perfect representation of fresh basil but used as a finishing oil on pastas, salads and for plating. The process is very simple, blanch basil for 5 seconds, then into ice water, blend and strain. Alternatively you could make a basil compound butter which also works well.

Recently I saw a video about prepare pesto, where they pointed out that home made pesto can sometimes get a slightly bitter note. Therefore you should blanch the basil. Does someone have experiences with it?

I make pesto fairly often and don’t notice any bitter note. Although I’ve never tried blanching it, so I don’t have anything to compare it to

@@swimfan752 In the end of summer I often have to much basil which I turn into pesto. A few times I had this slightly bitter effect: I didn't know it any better and added a bit of honey then. This spring I made pesto from wild garlic as well, which had a small bitter note, too.

It grows reasonably quickly in direct sunlight. If you have to keep it inside all the time it may take a while to grow

Super easy to grow. And if you think that the plant is dying, you can take a cutting off of it, and propagate it in water and have basically a new plant. Look up how to propagate basil. It's easy and pretty fun.

Wouldn’t the food you cook taste the same whether you use it raw, the end of cooking, or mid cooking? Wouldn’t the oils release and spread through out the food your cooking the same way it does when it’s raw?

They are volatile, so they evaporate away. Kind of like the alcohol when you cook with beer or wine.

I used to pipette my deviled eggs, but stopped because too much of the filling was left in the bag. Yes, they aren't as pretty, but they're more generous. No complaints so far!

should also mention that if you want to maximize the basil output of your plant you need to trim it correctly. once a basil shaft gets about 3 or so leaf "tiers" high you should cut it above the second tier to use the third bunch of basil. it's a bifurcating plant meaning that if you cut the main stem it will put power into the two offshoots and create those like main stalks... which you can then cut and bifurcate.

Nice video, and I generally do like your content, but I guess here's a bit of a critique I want to share. I love that you go 'deep dive' into the science behind what makes the food, very Adam R style, but I'll be perfectly honest, when the diagrams and random text boxes (multiple of them highlighted at the same time) came up, I didn't know what I should be reading, didn't know what all these random terms were you were talking about, and after watching it once I just didn't understand anymore about what happens to basil, or what makes up their smell other than there's some sorta oily thing in there... I will say I've never really walked away from an Adam R video feeling confused about anything (I'm seriously not trying to compare your videos, I love both your channels), especially after I get thrown some fancy terms or names. I would have loved if you slowed the explanation down a bit so I could actually understand what each... Insert names of parts of basil here.... are/do. Also another thing that kinda irked me, you wanted to compare two sauces that would be identical other than one thing, but then I saw a shot of you adding a 'pinch' of salt? I know its super small, but that leaves something up to human error as a pinch can vary so much... Yet you wanted to go super deep into the science part of the basil. I woulda thought for how deep you wanted to go you would have made the comparison more equal, measuring everything so you KNOW that the point in time you added basil was the only variable. TL;DR - Didn't understand basil, pinching salt aint measurable imo. Either way, love your videos, have basically watched them all, and will continue watching them!

Eh. Disagree in the salt pinch. Once you cook enough a pinch is pretty standard and you can adjust it with how many fingers you use.

Fun fact: You can leave basil in a glass of water for some days (change the water every 2 days) and it will grow roots, then you can plant it to earth and have more basil

Please add fresh curry leaves to the list of herbs. Curry leaves is not the same as yellowish curry powder obtained off the shelf. Fresh curry leaves is widely used in South Indian and Sri Lankan cooking at the end of the cooking process, as part of the tempering. Dried curry leaves not only loose the citrusy flavor but also spoil easily when airdried.
