Thank you so much :D yess you can totally make it the day beforehand, just be sure to store the cake in an airtight container at room temp to prevent it from drying out :)
Maple syrup will make this very, very sweet & it won't have the same depth of flavor. Molasses is key for getting the gingerbread flavor. If you don't have molasses or don't like it, maybe try a sticky toffee pudding recipe? It's similar in flavor but uses dates and no molasses.

Some people do use black treacle/golden syrup, but as Amy has kindly mentioned, it is a lot sweeter than molasses so you may need to reduce the overall sugar in the recipe :)
Honestly, molasses is key to get the gingerbread flavor. MK has so many other great recipes, I'd skip this one if you don't have or don't like the molasses. MK has so many great recipe, maybe try her pumpkin cake? I can't remember if she has a sticky toffee pudding recipe, but that is very similar to this and usually doesn't have molasses.

Hi Mariam! Blackstrap molasses (or molasses in general) is made from refining sugar. Blackstrap is a type of molasses that is refined the most. It has a deep, almost bitter flavour that adds heaps of depth to baked goods. Yes molasses is often used in gingerbread cookies :)

Heya! :) I haven't tried that myself so can't say for sure, but if the plant based egg acts very similarly to a regular egg, then it should be okay! :)
