YES! This is my drink. Absolutely love it. Try it with xyanthum gum (1/10th the dose as gum arabic). If concerned about foam I make the specs on the spot for the drink. So 1 oz of pineapple gum syrup would be 20.8g of Pineapple, 2.1 g of accia gum (or 0.21 g of xyanthum gum), 14.9 g of sugar, and a pinch or 0.08 g of citric. Thanks again for the amazing content. This is a great cocktail :-) I made it with “fresh” milk washed Barbancourt, and the foam was magnificent. I’ll be making a few more in the following days - waiting to see how it tapers off. Taste is very pleasant - and also: the pineapple gum syrup is good in so many things! Thanks :-)
The daiquiri is on my Mt Rushmore of classic cocktails. It's nice to have a few variations on the classic spec to rotate in when the mood strikes. I'm putting this one on the "try" list even though I shy away from science experiment builds. You make it sound like the juice is worth the squeeze. Thanks for sharing a spec I normally pass over.

Great video as always Derek. I've been keeping an eye on the Rishi Ruby oolong tea that the book specifies, but haven't been sure whether to just go for another more accessible oolong. You didn't specify, so I'm guessing the specific one isn't crucial in this case?
The Rishi ruby is the same that other brands call red. It has a fruity profile that goes great with the pineapple - that being said I’m sure that other oolongs (or probably a lot of other teas) would make a great combo.
Did you use Rishi oolong like TS suggests or something else. Your tea did not look like my Rishi leaves. Not sure about oolong tea if there are large differences that could be noted in this Barbancourt washed rum. Thanks Derek for this content!
