This is the 2nd recipe I tried as soon as I received my book. I will admit being super skeptical when I saw the rice ingredient..🤣! It added a depth to the cornbread that I truly appreciate. The flavor was crazy and went perfectly with my white chili recipe.
idk if i can get wit the rice (almost wondering if I should use Boudin instead)... but for real: what's the purpose of the rice? (serious question)... does it add another element of flavor?

That creole cornbread recipe is on point. It even makes a damn good dressing. I saw Ab make it and decided on a whim I was bored at the time so threw it together.
It’s 1:30am and I can’t sleep. I’m watching RU-vid videos and out of nowhere this video pops up. This cornbread recipe looks AMAZING!!!! I will be making it this weekend. I can sleep 😴 now and dream about how good this going to taste.
Mom always made cornbread like this, minus the rice and exchanged red pepper flakes for jalapenos. Never knew it had a name 😅. It was called "Momma's cornbread" Oh yeah you said a touch of butter, no sir swimming in butter 😜
My Mom makes Jalapeño Cornbread which is exactly your Creole recipe sans the rice! And my Auntie made a cake like recipe which was not sweet but it was sooo good! I'm intrigued 🤔 I think I may try your version! Looking good!
I haven't made cornbread in a long time. The cast iron skillet I remember is the way to go. Only we would sweat the bottom as it finished its last 10 minutes or so of cooking to get that crispy bottom and no corn meal to coat before the batter. You defintely have given me a hanker'n with the cheese rice combo.
Don't put cornmeal in the pan. Slop some "dont be shy" rendered bacon fat in the cast iron pan, then stuff it in the oven 'till it smokes. Then put the cornbread batter in the pan. That way A; The cornbread will not stick and B; The cornbread will have a nice crust all over the bottom. As for favorite, it Mexican cornbread!
Wow!!! In all my years...I'll just let you in on the fact that I'm a Baby Boomer...😊 I've never had cornbread made like this. This is a recipe to consider one day. 🤔 It could work as a skillet wonder with a glass of sweet tea, or warm cup of tea with 🍋 and 🍯 too. I got a few ideas floating in my head. 🤔 💭 As always... it L👀Ks G👀D!!!

I have tired it with both cream corn and whole corn in the ingredients at the same time,I have even had the jalapeño in some corn bread but I have to try this recipe with the cheese inside the skillet with butter on top
