For this holiday season I wanted to try something new! No spices for this Christmas beer, instead I used some spruce tips to make a delicious doppelbock!

SPRUCE TIP DOPPELBOCK RECIPE
Recipe for 5 gals (18.9L):
-7.76 gals (~29.3L) Water
______________________
~16 LBS [7.25 KG] of Grains
-68% Munich
-31% Pilsner
-1% Carafa III
______________________
Mash @ 155ºF (68ºC) for about 60 mins
______________________
Boil for 60 mins:
-.75 (~21g) Centennial
-1 LB Spruce Tips
______________________
-Lager yeast of choice
______________________
Original Gravity: 1.075
Final Gravity: 1.018
ABV: 7%
IBUs: ~20

I put the spruce tips in a hop spider, put the hop spider in the steel fermentor, pour in the boiled wort and let it steep for 24-36 hours, then pull the spider and pitch the yeast. Opening a bottle of this beer smells like standing in a conifer biome and the pine taste is amazing. My base beer is blonde ale at 6-7 ABV, but a double bock sounds interesting 👍🍻

Juniper is used in beer in Norway, both for desinfection an sparge, and as fermentable.

My first thought after drinking spruce tip tea two years ago was that I need to brew a beer with spruce tips. It just fits IMO

Hohoho! I decorate 'live' spruce trees and plant them in the yard after xmas. It's better for the planet and now I can see another reason why! Thx!

Spruce tips are amazing in beer, local brewery here used to make a spruce tip blond. Tasted really amazing, sadly they stopped brewing that beer. 2024 i also will start brewing again and will try out brewing with spruce tips also, hope it will be good! Thanks for the brew video's and lets go for a brew filled 2024!

Banded Brewing out of Maine makes a pretty solid spruce tip ale called Green Warden. Definitely my go to if I want that spruce flavor. Killer vid like always Trent.

Looks gorgeous ! Spruce tips also work really well with those citrusy american hops due to their own citrus aroma, in which case I'd dryhop with the spruce tips as you woud with regular hops. If you plan on foraging your own, it might be worth mentioning, that the spruce tips you harvest will vary in flavour depending on how young they are. If you go out into the woods really early in the year (season starts around april here in germany) and only take but the youngest, smallest ones you find, they're going to be quite citrusy with minimal pine / herbal notes, whereas those harvestet almost in summer will have largely lost their citrus like quality while offering much more resiny bitterness, something you can easily test by just chewing one while foraging. You can seal them up airtight and store in the freezer just like you would with hops. Apart from beer they're also traditionally used as a kind of cough syrup by being boild up with plain sugar and water, adding the resulting syrup to your tea instead of honey.

Another great video Trent, I love seeing brewers using new ingredients and ideas. I can't get spruce tips in my woods, but I can pick fir tips, which I use quite often in beer and cider. I'm watching you put a pound in there, and thinking " noooo... it'll be undrinkable...", as fir tips are quite strong (I use about 1 to two ounces in a whirlpool). Spruce must be a little more mild, so I'm glad it turned out well. Best wishes for the New Year.

I’ve been waiting to brew this exact same beer for months. I have the grains hops and yeast, but because it is the winter months there are no spruce tips where I live. I was wondering if you had ordered yours online and if they were good and fresh? I can’t believe we have the exact same idea. Thanks for the video will let you know when I make mine!

Hail to the doppelbock!! Great vid! The timing for this video is pretty good as I have a doppelbock in the fermenter right now. In fact, it is getting kegged this Friday. One question I have is….did you use Munich I or Munich II? If it was both, what was the percentage of each?

Hi Bru, Big fan of the channel and love the idea of this beer, but I want to help with info. My best friend, whom I did my graduate school with, owns and operates Einbecker in Germany (the brewery who invented the Bock bier in 1378. It is located in central Germany, not Munich as you misspoke of in the video. Was there during Oktoberfest this year - Bock was fantastic! Happy brewing
