Zucchini and Mint 

I stew courgettes. similar method but longer more olive oil to cover and a long slow cook of 30 mins on a low heat They become mushy and gorgeous. Add a good amount of salt after 20 mins. there is very little food not enhanced by mint and lemon juice.

I'm not so sure on the mint but i love zucchini. Think I'll make a small batch this weekend and see

I’m going to try this and use an airfryer for the zucchini with the same flavours
