ZUCCHINI RAVIOLI WITH RICOTTA CHEESE

INGREDIENTS:
2 cups ricotta
1/2 cup parmesan
1 egg
1 clove garlic, minced
pepper
salt
1 tsp dried basil
3-4 medium zucchinis
1 tbsp olive oil
1 1/2 cup marinara sauce
1/2 cup shredded mozzarella
Step-by-step instructions:
In a medium mixing bowl combine ricotta, egg, parmesan, minced garlic, basil and some salt and pepper. Stir until well combined.
Rinse zucchinis and slice two sides of each zucchini lengthwise.
Use a vegetable peeler to slice zucchinis into thin flat strips. Peel until You reach the center.
Lay two zucchini's strips so that they overlap lengthwise, than lay two more strips on top, perpendicular to the first strips. You should end up with a "+" shape.
Scoop about 1 tbsp of cheese filling in the center of the zucchini's strips and bring the ends together - as shown on the video.
Place the ravioli turned seam-side down in the large oven-proof dish greased with olive oil.
Pour marinara sauce over and top with mozzarella.
Bake in preheated oven at 375F | 190C for 20 minutes.
Serve hot.

PRO TIP
You can use 1/2 cup fresh chopped basil leaves instead of dried basil.
