I am close to making my own Absinthe. I have a few questions. 1. Is it really necessary to separate hearts and tails? If I use grain alcohol like Everclear then it has already had the hearts and tails removed. Right? How could acetone and methanol get into it? 2. Your recipe calls for “absinthimum” for color. Is this grand wormwood or Roman wormwood?

Nice 👍I have read there are some infections that eat the alcohol formed by yeast and make vinegar if left too long, sometimes I grab things early maybe not so much alcohol but at least nothing goes wrong and flavour is good. I made a wild yeast starter from dried raisins to put in some grape juice for wine but ended up buying some red wine yeast. but that fermentation was to slow so I put in my wild yeast anyway and it turned out very tasty however I have since made that into the spirit because I don't like wine anyway and it's very good. Big bag of old flour that I want to make into vodka without making it into bread first but I can't find any recipe. Have you tried malting wheat I want to try that ..anyway hope you, your family are safe and house is still ok. Cheers 🥃🥃to Ukraine and peace

Very nice! When we made it the first time, we poured the entire mixture, lemons and all, into a beautiful bottle that we placed in the freezer for a month or two. It was delicious! The second time we made it, the lemon peels had too much white pithe, so the cello came out bitter.
try it! we did it a few years ago, and i am back for more we just figured the proof by basing it on the what we started with, which was everclear... idk, maybe we got it wrong, but the stuff was great
the infusion is distilled. you can ferment whatever you want and distill that for the infusion. too hard and illegal for most of us, so either get moonshine from a friend or use everclear
I thoroughly enjoyed this video. I have been looking for an absinthe recipe for years, just not on youtube. This makes it all come together. The first part of your process I am very familiar with, the tincture making. If I were to make the tincture of Artemisia absinthium, vodka or rum, Melissa officinalis, and other herbs, minus the water, let it steep for two weeks, then strained, would that not accomplish the same task as the distillation?
if you strain a tincture, you are left w a tincture. distilling will leave behind more bitter junk and boil off unwanted flavors, creating a smoother drink
I just use bitter chockolade instead of "blackjack". Don't know if it is the same, but tastes really well. The hint to use Irish Whiskey is important, use whiskey.
