How to make Amaretto liqueur, recipes of homemade liqueur
Amaretto liqueur
Ingredients:
Vodka or stretched alcohol - 0,5 l;
apricot kernels - 50 g;
raw almond - 50 g;
water - 150 ml;
sugar - 150 g;
vanilla sugar - 2 tea-spoons;
cinnamon - 1 pinch (or 1 stick);
dry coffee extract - 3 g;
2 cloves;
about 4 bayberries.
Cooking process:
1. Pour almond with boiled water, let it infuse for about 5 minutes and then skin it.
2. Brown almond in the dry pan. In the end of browning add cloves and bayberries.
3. Wash apricot kernels, add here cinnamon and mix them.
4. Fill up the jar with browned almond and apricot kernels.
5. Make a sugar syrup. For this you need to pour sugar onto the crepe frying pan, add 50ml of water and warm it on ash fire stiring it from time to time till it become caramel colour. Then add vanilla sugar, 100 ml of water and mix.
6.. Pour slowly sugar syrup into the jar with nuts.
7. Soon after it simmered down till room temperature add here vodka and coffee.
8. Close up the jar, shake it few times and leave it for about a month in the dark cool place.I recommend to shake it from time to time while infusing (3-4 times per week).
9. Filter ready-to-drink homemade Amaretto through the cotton wool filter and pour out into the flagon or something like that.
Following this recipe Amaretto has rich, almond-nut taste with notes of coffee and vanilla. Delicious liqueur!
