Hello, fish sauce is more commonly used and fermented fish sauce(Pla-ra/Pla-deak) will be added more in Thai/Isaan or Laos food such as Som-Tum etc. Pla-Ra has a funky smell and tastes, full of Umami and salty flavors. Because of the smell, some people just totally don't like it. But personally I do like my Som-Tum with Pla-Ra 😋😊

Yes there’s several recipes for Prik Nam Pla. Some add lime juice as well, some also add shallots and cilantro, etc. In this recipe, there’re both lime juice and fish sauce and I soak the chili in lime juice first for 1 minute to keep the chili colors vibrant :)
Growing up, I always made this with 2 eggs, 1tsp fish sauce and a tablespoon of water. Never used lime juice or a colander or even deep fried for that matter. Just a bit of oil on high heat, cut in half and fold both parts over like an omelet . Can't wait to try this version!

My pleasure! Thank you for watching 😊 And unfortunately the curry paste can’t be substituted. Because all the main flavors are from the curry paste and each one tastes really different. I suggest to get Massaman curry paste and so far, Mae Ploy brand is the one I would recommend 😊🙏🏻

Great videos! However, shrimp paste is a bridge too far for me. I have a refined palate but can't get past the funk which tastes "rotted" to me. My wife is Vietnamese and she enjoys it.....
