You wouldn’t need torches on the roof if you used bottom slabs, mobs can’t spawn on them. Plus using slabs is more efficient material wise

if you don't like how glowstone looks you can make a texture pack and only change the glowstone texture to something you like

such amount of hoppers will cause lag and the individual collection points will be annoying when collecting the drops. a good solution to both problems is to remove the hoppers and chests, build a water sistem to unify all the drops (to the center for example) and build a storage of hoppers and chests there. apart from this crucial storage mistake, great work!
