I agree a breakdown of the shopping list would be a cool addition, but I can see why pouring over the receipt might be difficult to integrate with the format. Maybe if they were to film the shopping too it might be more engaging, but it might be more of a pain to produce.

As a side note for the cheese sauce, y'all gonna wanna fold in and melt the cheese OFF the direct heat of the stove, because if the cheese cooks you end up with a really grainy textured sauce.

I always love these videos because you're able to show us a cheaper (per serving) and delicious alternative to popular foods, but I always find it difficult to actually go out and buy the ingredients for these since I'll have so much leftover ingredients. And eating nachos everyday doesn't sound too fun. Do you think you could maybe do a series where you buy a set of ingredients for one week and show different recipes that use it all? Love your videos btw! Just throwing some ideas that could help entice people to really get out there and try these recipes for themselves.

My fridge doesn't keep stuff good for one week but I noticed if I buy corn edamem sweet pea carrot stirfry veggi on frozen packs that saves more and reduces waste. Ideally you need to buy some ingredients to make food last for two days and buying more without plan makes unfortunate amount of left overs often end up in trash. For me I don't compromise healthy food because it may end up few bucks more expensive. Fun fact organic rows are more potent to get discounts. You can make a soup for Monday Tuesdays a salad with remainings of soup for another two dinners a vegetable grill ( take vegetables same day from discounted shelves and use same day) use remaining of veggies for a fish recepie. Adding rich salads not only reduces hunger for snacks but also manageable. You still have to spend some time preparing ingredients and maybe buy toppings in sales or bulk such as walnut cranberry chia seed cheese and bread crumbs. Nuts and dried fruit doesn't go bad quickly and gives much flexibility to prepare stuff. A bulk dried peach cost less than 10$ can be made into nice dessert. Avoid buying coke icecream and any already prepared desser. A bread maker also saves money not to buy expensive breads.

Well for this you can have nachos, chips and dip, tacos, you could get some bigger tortillas and make burritos and chimichangas, hell, you could make a Crunch wrap. Add some variety to all of your dishes by making different sauces. A lime Crema, a Chipotle sour cream, maybe you some Taco Bell sauce or just some of your favorite hot sauce. Basically just make Mexican food. You've got all the ingredients

Another great cheese sauce recipe we use at the Mexican fusion place I work at: 1 can of evaporated milk 1 tbsp of corn flour (add when cold) 220g of grated cheese Smoked paprika to taste Salt to taste 2 tbsp of siracha 1 tbsp of Dijon mustard Diced Pickled jalapeños if desired Add all to a pan and whisk and heat until thickened :)

Next Joshua needs to make “but easier” where he makes high quality food as tasty as possible whilst using minimum work and effort. Now *that* I would actually be able to follow Edit: Thanks for all the likes! But lots of people are missing the point. I should’ve known the Internet always needs you to elaborate. It’s more so that Joshua always uses tools that lots of people don’t have and can’t afford. Or, even fit in their kitchen. That’s the other thing; Lots of people don’t have space to make much advanced foods cause their kitchen easily fills up with stuff. Also not everyone has an oven. I know Joshua’s whole point is that it’s worth it putting more effort into food to make it good. What I’m referring to is perhaps a series where he takes many of his popular more complicated recipes and figure out how to do them with less space and less advanced/specific cookware. Maybe “but smaller” is a better title. Recipes for way more basic kitchens with no special tools.

I make my nachos like a lasagna too. I just made homemade nachos a couple of weeks ago except the chips on top of the fresh shredded cheese I also used a Street corn queso dip from Costco

C'mon now, this isn't a bad recipe by any means, but the the toppings aren't even scoopable. There's a reason why the tomatoes and onions are usually small diced and put inside the sauce, so you can actually scoop them with a chip. It's probably still delicious, buy if you were to serve this at a party, the onions and tomatoes would stay on the plate.

Just a reminder that canned/frozen is acceptable y'all! If you're struggling for cash, it's better to actually use your fruit/veggies then having them go bad in the fridge. Also time is money, you don't have to make everything from scratch, especially if you're working 40+ hours a week. Everybody's "free time" is going to look different.

I cook the meat with onions, add 1/2 pack taco seasonings, top nachos with meat, shredded cheese, tomato 🍅, a little sauce, lettuce, sour cream and green onions, I grow them and tomatoes The Easy way for me

I cooked this tonight! This makes enough for about four adults. Unfortunately beef and cheese (even though we produce tonnes of it) are expensive in New Zealand right now! So definitely not super budget depending on where you live. Definitely delicious though 😋🥰 papa delivers on flavour!

My husband and I have been absolutely binging your videos, I looked up your story and read about your rough history in school. That breaks my heart because I know we would have gotten along if you had gone to my school!!! But, those hardships clearly had a key roll in making you into the man you are today. I deep fried my own tortilla chips for the first time a couple months ago. I don't think I can ever go back to store bought. It took me an hour to make a bag's worth, but I was eating like a king for the rest of that week.

I make them quicker by baking them, brush some oil on both side of the triangle tortillas and bake at 410°F for like 10 minutes, you can make 2 trays. They're so crunchy and perfect with like a 10th of the oil you would usually use.

When doing a recipe of this size, you need to include the amount of servings it has so people like (myself) who live alone don't have a ton of leftovers that go bad. At least with the number of servings we can figure out how to cut the recipe down to a smaller size.

I'd like to see a special series called "single meals" almost every recipe is made for 2-4 people. How about serving size for just 1 person? Take out all the guess work on measuring ingredients that are meant for 2+ people, and just make it for 1.

It is simply not economical. Dunno where you live, but buying stuff for one person is 1st expensive, 2nd impossible unless its like one steak and bag of veggies. Me and my roommates back in uni learned very quickly that it is way better to cook for the others. Little waste, diverse food, cheap as fuck that way.

Halfing a recipe sometimes works, but I’ve found freezing certain prep items helps split servings into smaller portions. For instance, I’ll make a pound or so of taco meat, then portion and freeze any leftovers. If it turns out particularly good, I’ll note that on the container. It’s way better than store bought frozen foods.

I use that mushroom trick to extend my ground beef a lot and my kids don't even realize they're eating mushrooms. Stroganoff, stir fry, tomato meat sauce, you name it.

It can also be an option to just keep the nacho's separate while scooping toppings and sauce. (assuming they're not very dry toppings anyway) Cheese that isn't liquified might have to go onto the nacho's, though, which is also a bit impractical if they stick together and steal each other's cheese when separating. My favorite super quick and simple way is probably to just put grated cheese and thin jalapeno slices on individual nacho's that are spread out across a flat surface, then dip in whatever dip you want. No meat but that's a lot more hassle when you're super lazy making the nacho's, can just finely chop some onions and whatever to put into the dip too.

A restaurant I like puts a thin layer of chips on the tray, then mounds the layers of dip in the center, then makes a ring of more chips around the mound. It’s pretty awesome. Choose your own adventure for sure

If you don't want to use flour, use two teaspoons of sodium citrate. This will emulsify the cheese sauce and keep the fats and proteins from separating. Just don't add extra salt.

Sodium citrate is great stuff. A sauce just made of cheese and water, without any flour, milk, butter or anything else. Grate the amount of cheese you want, use 93% of that weight in water and 4% in sodium citrate. Dissolve the citrate in the water, bring it to a simmer and then slowly stir in the cheese (Use a immersion blender if you're making a bigger batch). A great combination is aged cheddar, aged gouda and pepper jack in whatever ratio you like.

Good tip. The reason he's using the American is also to add emulsifiers. Technically, you can also skip the American cheese and add a mild cheddar if you are adding sodium citrate. I do find it adds a detectable little sour note, so I'll sometimes do the flour mornay method he used. Plus, this was a "but cheaper" episode, and most people don't have enough uses for it to keep it around. That said, I also keep the stuff around for cheese sauce, so I totally get where you are coming from.

What I like to do is, before you put on your guacamole and crema, sprinkle some shredded cheese over top and stick it under the broiler for a few seconds. Also, in my opinion, the tomatoes and onions should be mixed into the guacamole.

It will in the US too, everything went up and gas too. You can barely buy food with a 20 dollar bill. The avocados already cost 2 bucks themselves without anything else. The oil to fry the chips cost 7-8 bucks if you get the off brand.

I wish it was really that cheap But here in Quebec, just the avocado cost more than the whole portion And i dont talk about the cherry tomatoes that cost 5x what he says for the same portion Just to make the receipe here, You have for about 35$ to 38$ worth of ingredients to buy (depend on the ground beef price) Yes, you can make more nachos for that price, but at the end of the day, you dont need to make more than 2 or 3 portions and it will still cost you a lot of money

Thanks for this recipe. I just made a vegan version for dinner tonight. I've been struggling to get nachos right (not the eating part, the layering and all) and after messing up with 2 written recipes I decided to find a video version and this was just simplicity itself.

I use chipotle sauce too!!!! I thought I was the only one who did that. It's SO DAMN GOOD in taco meat. I add it to chili whenever I make that, too.

@@robertfolsom1 It's probably because they figure the oil is reusable. The same oil could be used for many meals. They should probably prorate that though. Canola oil is $8/gal at the store here. I would figure on gallon would be good for 4 meals conservatively (filtering the oil between each use). So that should add $2 to the cost, by my estimate. Just went back to check. The oil probably should count even cheaper. He ends up using 1.5 liters, which is the small container here, and it probably is reusable a few times. At $3.5, if we say it can only be used twice, that's $1.75, thought it's probably more like $1.

Like if i were to make this specific recipe now i would have to buy the 80/20 ground beef, corn tortillas, american cheese, american cheddar cheese, a can of chipotle adobo, the avocado etc. That is easily gonna cost me way more. I make my own corn tortillas and my own chips because it’s easy and cheaper…and AMAZING. Also, I live in Texas and this is the way.

no possible way to make tortillas cheaper than they cost in texas lol... don't forget to value your time... you can get a pack of 300 tortillas for like $2.... maybeeeeee you'd break even on ingredients..... only logical reason is if you have allergies... but corn is usually pretty safe and its even gluten free + vegan...
