We are making Eleven Madison Park’s Hamachi appetizer which only cost $7.56 per portion. We will be using some amazing Michelin techniques to make lemon oil, lemon and garlic horse radish puree to make a fine dining recipe at home. Eleven Madison Park is a Three Michelin starred restaurant located in New York City. It is now a vegan restaurant, so these recipes reflect what the restaurant use to serve. It is regarded as one of the best restaurants in the United States and the world.This Eleven Madison Park recipe comes from the Eleven Madison Park Cookbook.

Recipe:
Serves 4
Lemon Oil
5 lemons
4 oz oil, grape seed
Meyer Lemon Puree
3 meyer lemons
2 oz sugar
4 oz water
24 oz lemon juice
14 oz water
4 g butter
Pinch of salt
Garlic Horseradish puree
1 head garlic
5 ml extra virgin olive oil
35 g horse radish, peeled and diced 1/4 inch
24 ml white soy (Shiro Shoyu)
28 ml extra virgin olive oil
Lemon-white soy Vinaigrette
2 oz Meyer lemon juice
1/4 Meyer lemon zest
1 oz White soy (Shiro Shoyu)
Xanthan gum 1/16 tsp
2 oz extra virgin olive oil
1 Fennel, green stalk intact
8 oz Hamachi loin
Fluer de sel

The lemon puree was sweeter than I would expect, but along with the lemon oil it added a nice flavor. Fennel always adds a nice freshness to fish and the lemon-white soy vin really tide it in with the fish. I was skeptical of the garlic horseradish puree, because I thought it would over power, but it reminds me of fresh wasabi. Just be sure to let it sit, so it can mellow out. Overall, thought this was a great dish, it is affordable, relatively easy (for a 3 star dish) and tasted great. I agree that not spend too much money on fine dining, but you are not just getting good food from professional cooks and real hospitality service. I use the work there at EMP and more .

Yeah, of course but not everyone can afford to go out to a nice restaurant. I use to live in NYC and my wife and I would go out to a Michelin star restaurant every other month, cant do that now. Nice, I staged there, it is a cool restaurant. I worked at The Modern.
