الشربتلي
تعتمد الحرفة على نقع أنواع من الأعشاب المختلفة في الماء "المنقوعات"، وعن طريق طرق متعددة يتم استخلاص مذاق وفوائد تلك الأعشاب وتناولها في شكل مشروبات، فكل ما هو منقوع شربات لذلك سميت بالشربتلي، وهي تختلف عن العصائر "المعصورات" التي يتم استخلاص مذاقها وفوائدها عن طريق عملية "العصر" مثل بعض أنواع الفواكه والنباتات.
يعتمد محل الشربتلي في صناعة تلك المشروبات الطبيعية على المهارات اليدوية والمعارف التي تعلمها عن أجداده، فبدأ منذ 1886م، وما زال يعمل حتى الآن في هذا الاختصاص الذي رفض دخول المشروبات "المعصورة"التي تعتمد على العصر مع المنقوعات.
كان يعتمد الشربتلي على مشروبات "التمر الهندي" و"العرقسوس" و"الخروب"، إلى أن دخلت حديثًا مشروبات النباتات مثل "الدوم" و"السوبيا"، ومشروبات ساخنة تقدم في فصل الشتاء للحصول على التدفئة مثل مشروبات "الحمص" والسحلب".
يستخدم الحرفي "شاش قماش" في تصفيه المشروبات المنقوعة من الشوائب، حيث يخصص نوع من الشاش ذو مسام واسعة في تصفيه العرقسوس، بينما يخصص شاش أخر خفيف ذو مسام أضيق في تصفيه بعض المشروبات الأخرى مثل التمر هندي والدوم والخروب.
تتشابه طرق عمل المشروبات المنقوعة ببعضها إلى حد كبير، فعلى سبيل المثال تبدأ طريقة عمل العرقسوس بوضع كمية منه إلى طبق عميق "استانلس" ثم يضاف إليه قليل من الماء، ويقوم بخلطهم بالأيدي "دعكهم" حتى يصبح القوام متماسكًا إلى حد ما، ويستمر في "الدعك" حتى يصبح اللون أغمق عما كان عليه في البداية ليميل للون "الأسود".
ثم تأتي مرحلة التصفية، وفيها يُجهز الشاش المخصص للعرقسوس، ويوضع بإحكام فوق مصفاة لتصفية العرقسوس، وربطه بقطعة قماش حتى لا يتحرك أثناء التصفية، ثم يوضع العرقسوس على الشاش ويضاف إليه الماء بحرص حسب الكمية المستخدمة، ثم تزال قطعة الشاش ويعصر ما تبقى منها من المشروب، ويقلّب بالكوز المخصص له حتى تزداد الرغوة التي تميزه عن غيره من المشروبات.

The craft depends on soaking different types of herbs in water "soaked", taste and benefits of these herbs are extracted by multiple methods and taken in the form of drinks, everything that is soaked sherbet so the craft was called Sharbatly, and it differs from juices "squeezed" that there taste and benefits are extracted through the process of "squeezing" such as some types of fruits and plants.
Sharbatly shop relies in the manufacture of these natural drinks on the manual skills and knowledge that he learned from his ancestors, so he started since 1886 AD, and is still working until now in this field, which refused the presence of "squeezed" drinks that depend on the squeeze with infusions.
Sharbatly relied on "tamarind", "licorice" and "carob" drinks, until the recent use of plant drinks such as "dom" and "sobia", and hot drinks served in the winter to warm people up , such as "hummus" and "sahlep" drinks.
The craftsman uses "cloth gauze" in filtering the soaked drinks from impurities, where a type of gauze with wide pores is allocated in filtering licorice, while another light gauze with narrower pores is allocated in filtering some other drinks such as tamarind, dom and carob.
The modus operandi of soaked drinks is very similar, for example, the modus operandi of licorice begins by putting a quantity of it to a deep dish "stainless" and then adding a little water on it, and mixing them with hands "scrub" them until the texture becomes somewhat cohesive, and continues to "scrub" until the color becomes darker than it was at the beginning to tend to the color "black".
Then comes the filtering stage, in which the gauze dedicated to licorice is prepared, and placed tightly over a strainer to filter the licorice, and tie it with a cloth so that it does not move during the filtering, then put the licorice on the gauze and add water carefully according to the amount that is used, then remove the piece of gauze and squeeze the rest of it to get the rest of the drink , and stir with the cup allocated to it until the foam that distinguishes it from other drinks increases.
