Fish Nirvana : I'm an ardent admirer of Chef Suresh Pillai's cooking style, which reflects the traditional Kerala cuisine. For quite some time, I had been longing to savor his fish nirvana recipe, and today, I finally got the opportunity. The dish involves marinating the fish with spices and shallow-frying it before poaching it in a coconut milk and ginger-based sauce. To impart a distinct flavor and aroma, the fish is poached inside a banana leaf. As a South Indian, I find the combination of coconut milk and ginger to be truly unique and delightful, making the sauce irresistibly tasty. Poaching the fish in an earthen pot, which gives the banana leaf a curved shape, elevates this dish to a refined version of 'meen pollichadhu'. Despite its sophistication, this recipe is simple enough for even beginners to prepare successfully.
