Honestly, you guys have helped so much with getting my parents more plant based! We grew up in Ireland and live in the US now ... However, I could show my mum a million American RU-vid recipe videos and nothing registers, but I show her one video with you guys and she's running out to buy everything to make the recipe!!! I send her all your videos now 😀 It really helps that you do the budget ones too, cuz Irish mammys can be real cheap, lol.
Looks great. You can just mix up the flour with some cold water before putting it in the gravy so you won't have to deal with the lumps of cooked flour.
If you can afford in add vegan red wine to the gravy, it makes it so special and tasty. If your in the UK most of Sainsbury own brand is vegan (just check the label) and pick up bottle for £5.
This recipe is perfect and I followed the instructions EXACTLY! The wellington was AMAZING and yes, add the extra soy sauce to make it extra-tasty! I cooked my potatoes and carrots in the same baking tray and I had the best result by slightly boil the potatoes first and add the carrots 20 mins afterwards and rotating the potatoes and the carrots once to make sure they cooked evenly on both sides. Yes, I cooked this meal twice in preparation to make sure Christmas went well... and it's such an AWESOME recipe!
Oh no! I thought this looked great & wanted to try it but I havent got a twin to help me shape the pastry so I suppose thats it then. They should have said you needed a twin right at the beginning!
So I just prepared this whole meal for our Christmas dinner. It was amazing! I love how everything gets done at the same time, and in one hour we had all dishes on the table. Thank you sooo much for sharing, it was indeed delicious and super filling!

Made this wellington a few times now but previously used rice or potatoes instead of cous cous and sometimes a different variety of vegetables, always good. This year I used the onions/garlic/carrots/parsnip base with roasted swede, lightly sauteed, mashed chick peas, chestnuts, roasted cashews and walnuts in shortcrust pastry. Best ever. Thank you.
Looks fantastic as usual. Also, as a side note, with the gravy you can do the oil, add onion, then add flour, Stir and THEN add broth or water and seasoning. That way you NEVER have to strain the flour clumps out. They completely dissolve. If it needs to be thicker, mix flour and cold water mixed well in a cup and add it slowly to the already made gravy, while it's still simmering, until it gets as thick as you want it. Gravy is one of my specialties. 😊😊😉. Love all of your recipes!!! 👍🏼

Thanks for this Xmas dinner recipe. I will go for it with some twists. I will replace couscous by potimarron (pumpkin kind), potatoes by chestnuts and I will mixed carrots and sweet potatoes fries. A little more expensive but not out of range. Thanks a lot !

This is our first vegan Christmas too and I’m cooking for a family of 5! Really wanted to make it special, but couldn’t figure out how till I found this video! I already made a veggie loaf and stuffing ahead (frozen now), but now I think I’ll turn the roast into a Wellington by wrapping it in dough. Then add the yummy looking carrots and cabbage as sides. Suggestion, if you dissolve the flour in a little bit of cold water before adding it to the gravy, you don't have to strain the gravy afterwards ... Great recipes, can't wait to try them.

Greetings my Vegan Brothers! This is perfect especially since finanances has been very tight as of late. This is going to be a fun one to try with my son (who is vegetarian) but is also LOVING vegan dishes even more! I would love to try to cook this with my son. You guys have encouraged me to cook more with him and now he is in love with tamari! heheheheeee. AND he is making ME food for work that is vegan! (im so happy) I have to ask though....what paper do you use in the oven with the wellington? I also have the challenge of only having a toaster oven as an oven for the regular oven we have is broken. I cannot do better than my instant friend below, except, why all of a sudden all of that oil ... a bit of oil, bros, people hated me in school because i was a girl and mouthy with it, but seriously, i would use a sweet potato and use less time. At what stage can we freeze this ahead of time please? Edit....I froze the whole thing with the raw pastry, it cooked fine. I also made mini sausage type rolls, cooked them first then froze them, they were fine defrosted and warmed through!
If you're gluten free and making this with ready made gluten free pastry, make sure the stuffing is cold before you make the Wellington because if it's hot the pastry will turn to goop.
Great spread. I love your Wellington however, I generally prepare mine with lentils rather than couscous because of my obsessive need to protein bulk my meals. Happy holidays!
Omg I made this pie today. Gosh its massive and delicious and would feed an army. And yes the gravy ( which I'd never normally use) was great too. I started with the pie allowing the ingredients to cool before wrapping in pastry then put all in the oven together. I hope it freezes after cooking theres a lot here. About the harder bits of cabbage - just treat them as parsnip, grate it down in the stirfry, and it will be good. Or you can parboil them and save for cauliflower rice :-D

In one of the Fit For Life books (might have been the second one, the recipe book) Marilyn Diamond had a great recipe for maple-glazed carrots. I am not a carrot fan at all but her recipe was delicious.
