I had the same problem with jackfruit 'till I stopped thinking of it as a meat substitute, and started using it as a vegetable, like canned artichoke. It's good in spinach dip, or on pizza, or in a veggie curry!
I'm a microbiologist and use agar agar almost every day in the lab... It's totally fine to use after expiry, I've been using the same container of it for like 4 years
for the dried mushrooms, I personally like to put them in noodle soups. (you can rehydrate them with the noodles while the noodles cook in the boiling water) very delicious and easy.
I use the hanging shelves underneath my cupboards for extra storage. I usually use them for potatoes and other produce that doesn’t live in the fridge 😀
Heidi Swanson has a recipe for fried rice made with millet in one of her cookbooks that is also great because it uses a lot of it up at once! I also had a ton of millet to use up last summer and made that several times.
Stuffing mix --> savory bread pudding? Not sure if there's a vegan way though. Also friendly reminder that if you have unopened, unexpired food that you really don't think you will use, you could always donate it to the food bank...
The first "mystery grain" is millet!! I like making porridge with it; add fruit, cacao powder, something sweet etc. It´s also nice with some vegetable stir-fry.
For your glut of jackfruit: make it bbq style (It Doesn't Taste Like Chicken had a great recipe), put it on top of roasted potatoes and cover with cheese sauce (It Doesn't Taste Like Chicken also has a great recipe for mozzarella cheese). Delicious.
Ok a few things i want to try in this cabinet (as a person w adhd who also needs to see everything)- cans still on top, but stacked like at the store, sometimes 3 tall. Its honestly usually quite stable and then u have a visual of every can u have. And yes u have to get a stool and grab one down but that doesnt happen that often and at least u remember whats up there! Also u said u moved the stuffing- good bcuz baking ingredients can easily take on other smells esp if open bags! Also also what if the baking shelf was lower because u dont need it that often and the one thats prime eye level was like just all things either for dinner times or things you know youll forget to grab? For ex i keep tato chips on top shelf because my brain never forgets them but random misc item eye level because i already forgot it before i brought it home.
Your organization looks great!! I use millet up by grinding it into a flour and then mixing it with oat flour (either fine store-bought or ground rolled oats) when baking muffins or some cakes.

Yes please to a baking video! I love baking food & go through periods of baking a fair amount... & then nothing for a long time. But I'm always happy when my bakes turn out successful. I'd like to challenge myself here too!

nikkivegan has been raving about a farro arugula salad with grapes that she had and i’m rly curious to try it. i love barley and i think it has a similar texture so it would probably be great in soup too.
For jackfruit, I'll be making like a chilli san carne with beans, all the seasonings and tomato sauce and beans etc. simmering away in the pot, and then I just rinse off the jackfruit and throw it in to summer with the rest. It gives it a nice texture I find, but you also have the beans for protein too. :)
For the peppermint marshmallows, you could make peppermint bark but sub the candy cane for marshmallows, you could even add in pretzels or graham crackers
i suggest making kohakutou ( japanese crystal jelly ) with the food colouring and agar agar. It’s super easy and you only need three ingredients: sugar, agar agar and water
I am a mom of 3 and we do a pantry challenge a few times a year here. We take inventory and then make food around it for 1-3 weeks depending (obviously buying produce when needed).
Sofritos darling Emily. Do they not have it in Clovis anymore? They have it here in Colorado. I too, have a can of Jackfruit that has been sitting in my cupboard for a long time. I just don't eat jackfruit much. But jackfruit quesadillas sounds good. A local taco shop to me has a jackfruit quesadilla that is really good! But it has beans in it too, lol.
i like using mini lazy susans (idk what they're actually called) in my pantry! its not the most space efficient bc they're round but i get to see the front and back of my shelves just by spinning them around

can u maybe turn the hanging under shelves things upside down and use them as a sort of extra shelve? not sure if they’re too slanted for that but could work?

You could do a Pride themed video and use the food coloring for that! And maybe melt the marshmallows to create a vegan marshmallow fluff for ice cream or drinks.
Do you and Casey (not sure if I spelled it right lol) share the pantry space? Also I got the Sam's choice oat milk dark chocolate after you mentioned it a couple videos ago and really liked it! I like that it still has the dark chocolate flavor but less of a snap/it's slightly softer
yes we share a lot of groceries cuz we eat similar but we just have certain things that are ours & we kinda just keep mental track of things instead of having our own areas lol yes i love the oat milk dark chocolate i would love to try it in a smore 😯
Check to see if you have a “buy nothing“ group in your neighborhood/town. Someone will take the items that you don’t want anymore, even expired! In my group you just post a picture and description of what you are giving away, people comment if they want it and then the come pick it up from your house!
