Ingredients
Handmade folded chocolate sheet
15g rice flour (Mizuhochikara)
5g potato starch
15g cocoa powder
15~20g Sugar
5g cacao butter (butter or coconut oil is also OK)
(without oil is also OK)
70g water (or soy milk, cow's milk, or oats milk)
Dough
150g rice flour (Mizuho Chikara)
140g lukewarm water (30℃) (water in summer)
3g salt
5g sugar
2g dry yeast (strong fermentation recommended)
5g Oil
4g Psyllium
40°C(104°F)for 20 minutes
→Bake in a preheated oven at 190℃(374°F)for 20 minutes.
(If you want a firmer dough, preheat the oven to 180°C(356°F)
