#032 Pasta Arrabbiata with eggplant

【Ingredients/amount】
Pasta (1.9㎜)----------320 g
Eggplant-----------------2
Fried oil------------------desired amount
Bacon---------------------200 g
Eschalot -----------------2
Celery --------------------1
Garlic----------------------1
Olive oil-------------------2 Tbsp
Basil-----------------------desired amount
Thyme -------------------desired amount
Butter----------------------1 Tbsp
Tomato-------------------1
Salt and pepper -----a little per each

Consomme powder-------------1 tsp
Canned tomato whole --------300 g
White wine --------------------------3 Tbsp
Caper(chopped)--------------1 - 2 Tbsp
Chili pepper(chopped)----1
Grated parmigiano cheese----------desired amount
Italian parsley------------------------------desired amount
Coarsely ground black pepper-----desired amount
【Cooking process】
① Cut eggplants into 2 cm round pieces and fry them in oil.
② Boil pasta in plenty of hot water with salt.
③ Cut a bacon into 2 - 3 cm dice, slice an eschalot thinly, slice a celery diagonally and thinly, crush and chop garlic.
④ Heat olive oil in the frying pan, fry bacon up, add the eschalot, celery, and garlic, fry them up together.
⑤ Add a chopped basil and thyme in ④, add butter, chopped tomatoes, salt, and pepper, mix them together.
⑥ Add A in ⑤, boil it until it becomes thick, add the boiled pasta and grated parmigiano.
⑦ Decorate it on a plate, sprinkle chopped Italian parsley, put the fried eggplants on top, sprinkle black pepper if you like, pour olive oil (desired amount) over it.
