This is a dish I remember having as breakfast during my middle school year. I was so impressed by how my mom was able to put dishes like this in the morning almost like magic. It's got the flakiness of a scallion pancake but is extra soft and flavourful from the egg in the centre. The first time I attempted it myself was during university and it was surprising how easy it was, as long as you follow the 3 tips my mom figured out to guarantee success.
