If you’ve ever seen wagyu sliders that’s the idea, ground on its own it’s way to fatty and would just melt away. What I would do is take all the trim, dice it up into smaller cubes, I’d take a leaner good quality but neutral cut of meat like sirloin, measure it out at 70% to the wagyus 30% fat, grind the sirloin once, mix in the fat then grind it a second time. Retail it as wagyu burger and get some of my money back. It might sound a little sneaky but it needs to be used for something and the actual muscle fibres in wagyu are almost irrelevant, it’s the fat that’s the prize. This way you get a product that is actually useable.
