材料:
夏威夷木瓜(細)3個
紅衫魚仔一斤
薑一舊
處理:
1. 紅衫魚仔,清除內臟,清水洗乾淨,擎乾水。
2. 薑,清水洗乾淨,打直一開二,拍鬆。
3. 木瓜,去皮,清水洗乾淨, 一開二 ,去籽,每邊一開三,切粒,放碟上。
烹調:
1. 大火在鑊內燒熱油一湯匙半。
2. 魚及薑,放鑊內,轉中慢火,繼續煎。
3. 另一邊,在鑊內煲滾清水3升。
4. 魚,一面已煎至金黃色,反轉另一面繼續煎,及壓爛。
5. 轉大火,水已煲至大滾,滾水灒入鑊內,大火滾起,轉中慢火,滾20分鐘。
7. 另一邊,洗乾淨鑊,及預備隔篩。
8. 魚湯,過濾到另一邊鑊內。
9. 木瓜,放入魚湯內,大火滾起,轉中慢火滾15分鐘。
10. 完成,可享用。
Threadfin bream soup with papaya
Ingredients:
Hawaiian papaya (small) 3 Nos.
Threadfin bream (small) 1 catty
Ginger 1 No.
Preparation:
1. The fish, remove intestines. Rinse thoroughly. Drain.
2. Ginger, rinse with tap water. Divide it into 2 shares vertically. Beat well.
3. Papaya, get them peeled. Rinse with tap water. Divide each into 2 shares. Divide each share into 3 pieces. Dice in cubes. Put on a plate.
Steps:
1. Heat up 1.5 tbsp of oil at high flame in wok.
2. Fish and ginger, put in the wok. Turn to medium-low flame and continue frying.
3. On the other side, heat up 3L of water at high flame in a wok.
4. The fish, one side has been fried into golden yellow, flip over and continue frying. Squash it.
5. Turn to high flame. Water boils up. Pour the water into the wok. Heat up at high flame. Turn to medium-low flame and boil for 20 minutes.
7. On the other side, rinse a wok. Get ready for a drainer.
8. The fish soup, filter into another wok.
9. The papaya, put into the fish soup. Heat up at high flame. Turn to medium-low flame and boil for 15 minutes.
10. Complete. Serve.
