客家算盘子(食谱)
A材料
500克 芋头
250克 木薯粉
半小匙 五香粉
半小匙 鹽
B材料
1片 木耳
3朵 香菇
200克 豬肉碎
2大匙 蔥蒜末
少許 麻油
4大匙 食用油
1大匙 蠔油

1大匙 生抽
1小匙 胡椒粉
1條 紅辣椒
1小把 青蔥
2大匙 蝦米
2小匙 魷魚絲
半杯 清水
首先將芋頭去皮切片清洗乾淨,放入已預先燒開的鍋裡蒸上20分鐘後取出倒入攪拌機裡並倒入五香粉,鹽及木薯粉趁熱的攪拌均勻搓揉至軟硬適中的粉糰蓋上保鮮膜以免風乾,然後取出1小份搓揉成長條切成小段再搓揉成算盤子的形狀用手指在中間按壓,搓揉好後的算盤子撒上少許的粉避免粘黏,把已泡發好的香菇和木耳切成絲,然後將早已用半杯水泡發半小時的蝦米及魷魚絲過濾出水份留著備用,將蔥與辣椒切成段備用,將算盤子倒入預先燒開的鍋裡煮至浮起後撈起放入冷水裡,這步驟了增加口感,將泡冷的算盤子撈起倒入1大匙的油避免粘黏,將鍋燒熱倒入4大湯匙的油爆香蔥蒜末至金黃後撈起,將蝦米魷魚絲倒入鍋裡爆香後加入豬肉碎拌炒後加入香菇木耳絲再次的拌炒加入黑醬油,生抽,過濾出蝦米水,蠔油,胡椒
粉,糖,黑醬油拌炒後倒入算盤子焖煮至水收干已成浓稠加入葱段红辣椒及已炸至金黄的葱蒜酥,起锅后加入少許的麻油用作提香,已好的算盤子可上桌了,謝謝

This step increases the taste. Pick up the cold soaked abacus and pour 1 tablespoon of oil to avoid stickiness. Pour the pot on heat. Stir 4 tablespoons of oil with shallots and minced garlic until golden brown. Pour the dried shrimps and squid shreds into the pot and stir fragrant. Add the minced pork and stir fry. Then add the shiitake mushrooms and fungus shreds.
