Ingredients
Taro Abacus Seeds Dough
- 250 g taro
- 125 g tapioca flour
- pinch of salt
- water to cook the taro
Toppings and Seasoning
- 4oz firm tofu, mashed
- ¼ cup chopped shallots
- 1 teaspoon chopped garlic
- ¼ cup sliced mushrooms
- ¼ cup sliced wood ear mushrooms
- 1 tablespoon vegan 'oyster' sauce
- 1 tablespoon gluten-free soy sauce or to taste
- 3 stalks of green onion white and green parts separated
- a handful of chopped cilantro
- ½ cup water or veggie stock
- white pepper

May I ask what's the difference between this and Wu Gok??? This recipe has taro and tapioca starch. Wu Gok has taro wheat starch.

I did this today. My taro dough came out a bit dry than yours'. I let it rest for about an hour or so still looked bit drier than yours'. Are you supposed to add tapioca starch while the taro is still steaming hot?? I made into balls they are nice and chewy. Than you for the recipe. 🥰😍

Hey Tiffanie, I find that adding taro while it's warm is best to incorporate the ingredients. If yours appear to be too dry, in the future, you can wet your palms while molding the balls. It helps moisten them.

Hi Woon Heng... I am bad at estimating. How much water did you add into the yam dough/ flour mixture?

Hey Gayle, no problem at all. I would use 1 - 1.5 cups to cook the taro. The good thing about this recipe is that if the dough appears to be too dry, you can a little more water or more tapioca starch if you have too much water. :-) Let me know how it goes. Good luck!

@@WoonHeng Thank you! I just made your eggplant recipe today and it was awesome! I found the water, flour, taro proportions at meatmen singapore website... boiling water added 1 part, flour 2 parts and taro 4 parts. That however is for the steaming method. Keep up your good work!

Tiffanie, rice flour won't have the QQ texture. It's best with tapioca.
