大家好,欢迎来到我的频道!今天,我将向大家展示如何在家制作三种口味独特的腐乳:红油腐乳、素腐乳和叶腐乳。
腐乳在云南大多数地方叫卤腐或卤豆腐,我来到美国以后才知道,大家说的腐乳就是云南的卤腐,为了大家交流方便,我的视频中都用腐乳。
制作腐乳所需的材料包括老豆腐、生姜、芥菜叶、高粱酒、植物油、食盐、辣椒面、花椒粉、八角粉、草果粉以及腐乳曲。
所有要用器具要求干净、干爽。
红 油腐乳具有浓郁的油香味,配馒头、稀饭、拌面条都是美味。
素腐乳又叫水腐乳清爽的口感是云南风味蘸水的灵魂所在。
叶腐乳用芥菜叶子包裹发酵而成,带有云南咸菜独特的香气和口感,妥妥的云南酸腌菜腐乳。
无论是红油腐乳、素腐乳还是叶腐乳,它们都是云南民间餐桌上的美味和调料,大多数家庭用来拌面条、下馒头、稀饭和做蘸水等等。

Hello everyone, welcome to my channel! Today, we are going to explore the traditional culinary culture of Yunnan, China. In this video, I will show you how to make three unique flavors of fermented bean curd: oil fermented bean curd, water fermented bean curd, and leaf fermented bean curd.
In most parts of Yunnan, fermented bean curd is called "lu fu" or "lu doufu." I only learned that what people refer to as "fermented bean curd" in the US is actually "lu doufu" from Yunnan after coming here. For the convenience of communication, I will use "fermented bean curd" throughout my videos.
The ingredients needed for making fermented bean curd include tofu, ginger, mustard greens, sorghum liquor, vegetable oil, salt, chili powder, Sichuan peppercorn powder, star anise powder, Tsaoko powder, and red yeast rice.
Ensure all utensils used are clean and dry.
Oil fermented bean curd has a rich oil aroma and is an essential seasoning for many Chinese dishes.
Water fermented bean curd has a refreshing taste with a hint of rice wine aroma, making it an ideal choice for simple home-cooked dishes.
Leaf fermented bean curd is wrapped in mustard greens and has a unique aroma and taste reminiscent of Yunnan pickles.
Whether it's oil fermented bean curd, water fermented bean curd, or leaf fermented bean curd, they are delicious condiments commonly found on Yunnan dinner tables. Most families use them to mix with noodles, serve with steamed buns, or add to porridge, symbolizing the rich and diverse culinary culture. Through this video, I hope to share the charm of these traditional delicacies with you.

我同學在昆明每次去雲南都去看她也都會吃到很多各種美味小鹹菜,在纽约吃不到。想问一下,制作过程中发酵不排气瓶子会不会爆裂啊
