毛姐西班牙紅蝦扁意粉
材料:
1. x6 西班牙特大紅蝦
2. 250克 扁意粉
3. 兩粒 蒜頭
4. 橄欖油
5. 胡椒粉
6. 鹽
紅蝦醬汁
1. x6 紅蝦頭
2. 500毫升 魚湯
3. 500毫升 水
4. 100克 番茄
5. 100克 洋蔥
6. 100克 紅蘿蔔
7. 2湯匙 茄膏
8. 2湯匙 白蘭地
9. 2湯匙 白葡萄酒
10. 百里香和月桂葉
11. 番茜
12. 牛油紙
方法:
➔ 熱鍋加入少許油
➔ 加入蝦頭炒香
➔ 加入切碎的洋蔥和胡蘿蔔
➔ 把已加入的材料炒至乾身
➔ 將白蘭地倒入,拌勻
➔ 加入茄膏和番茄,拌勻
➔ 倒入白葡萄酒
➔ 加入百里香和月桂葉
➔ 倒入煲滾的魚湯和水
➔ 用牛油紙蓋上
➔ 將火降低至中度,慢煮30分鐘
➔ 倒入攪拌機中攪拌
➔ 過濾醬汁
➔ 把過濾好的醬汁倒入煲內煑熱
➔ 意粉瀝乾水份後放入醬汁內煑熟
➔ 取出扁麵條
➔ 醬汁煑至變稠
紅蝦煑法:
➔ 撒些鹽在紅蝦上
➔ 熱鑊燒油後加入蒜頭爆香
➔ 放入紅蝦煎至8成熟
➔ 挾起備用
擺盤:
➔ 扁意粉用擺盤鉗和匙羹捲起放在已預熱的碟上
➔ 將紅蝦放在扁意粉上
➔ 加入醬汁
➔ 用番茜裝飾
Mo's Carabineros Red Prawn Linguine
Ingredients:
1. x6 Carabineros jumbo size prawns
2. 250g Linguine
3. x2 Garlic cloves
4. Olive oil
5. Salt & pepper
For the sauce
A. x6 Prawn heads
B. 500ml Fish broth
C. 500ml Water
D. 100g Tomato
E. 100g Onion
F. 100g Carrot
G. 2tbsp Tomato paste
H. 2tbsp Cognac
I. 2tbsp White wine
J. Thyme & bay leaves
K. Parsley for garnish
L. Parchment paper
Preparation:
❏ Soak linguine with water 2 hours ahead
❏ Bring fish broth & water to a boil
❏ Shell & devein the prawns
❏ Keep the prawns in the fridge
❏ Keep the heads for the sauce
❏ Dry the heads with kitchen paper
❏ Chop tomato, onion & carrots into small pcs
❏ Press garlic for the prawn-searing
Method:
➔ Heat up the pot with a little bit of oil
➔ Sear all the heads
➔ Add in chopped onion & carrot
➔ Sear until they are almost dried
➔ Pour cognac to flambé
➔ Add in tomato paste and tomato, mix everything well
➔ Pour white wine into it
➔ Add thyme & bay leaves
➔ Pour boiling fish broth & water into it
➔ Cover the sauce with parchment paper
➔ Lower the fire to medium and simmer for 30mins
➔ Move it to mixer and blend it well
➔ Strain the sauce
➔ Bring the sauce to a boil
➔ Add into it the soaked linguine
➔ Cook it until the color changed and al dente
➔ Set aside the linguine
➔ Keep reducing the sauce until thickened
For the prawns:
➔ Marinate the prawns with salt
➔ Heat up a pan with some oil
➔ Sweat garlic in the pan
➔ Add in the prawns and fry until it’s 80% done
To serve
1. Place linguine on a warm plate with carving tongs and
spoon
2. Place the red prawns on top of the linguine
3. Pour some sauce over
4. Garnish with parsley
