這是我做麵包系列內一個影片。實驗時間:經常有朋友問酸種放多了會怎樣?今天來個實驗,做兩個麵包,一個是正常的份量,另一個則用雙倍酸種。這是個有趣的實驗,大家一起來看看結果怎樣。
正常麵包材料(75% 水分):
高筋白麵粉375g
鹽5g
酸種150g
水263g
雙倍酸種麵包材料(75% 水分):
高筋白麵粉300g
鹽5g
酸種300g
水188g
This is a video of my bread making series. Experiment time: Friends often ask what happens if you add too much sourdough starter? Let's do an experiment today, make two breads, one is with normal ingredients, and the other is with double sourdough starter. This is an interesting experiment, let's see how it turns out.
Ingredients for the normal bread (75% hydration):
Strong White Bread Flour 375g
Salt 5g
Sourdough Starter 150g
Water 263g
Ingredients for the bread with double starter(75% hydration):
Strong White Bread Flour 300g
Salt 5g
Sourdough Starter 200g
Water 288g

来自马来西亚,你的教学很好,让我受益匪淺,跟着你做天然酵母到做欧包,遇到不明白的你也回復我,成功多次,真的很感谢.这里想了解这段教程,我可以这样理解吗?其实酵种放多了也影响不大,对吗?不少于原配方就行?

你太客气了,知道你成功我也很高兴! 可以这样说,酸种 sourdough starter 放多或少一些影响不大,我的实验看到放多了不少好像两倍,也只会有一些轻微过度发酵,倘若缩短发酵时间,可能这问题也可以解决。所以我的结论是放多一些是没有大影响,多很多或少很多或许影响会明显很多,有机会我会再做实验,看看怎样。

Hi, Gary when u baked the bread first use lower heating for 15 mins then turn to fan modes for 15 mins do u turned on upper n lower heatings or only lower heating thk u

When I turned to fan mode, both upper and lower heaters were on.

Hi, sourdough bread is made from sourdough starter. You may use instant yeast to make bread but it is not sourdough bread. Since instant yeast reaponse time and behavior are so different to sourdough starter, the procedure and timeline of making instant yeast bread are not the same as sourdough bread.

為何焗出嚟嘅包好「實」?如果加雙倍酵母會否好啲呢?

包好「實」有好多可能性,除非明顯係因為落少咗酵母,否則唔會加雙倍酵母去改善

夏天開冷氣,甚少高過26,約25左右

你好,每部焗爐都有不同,我的做法和焗爐温度調較,都是跟據我的環境和我的焗爐表現所作的決定。你祇可以參考我的做法,再根據你做出來的結果放胆調較,放胆去試。如底部唔夠色,應是下面熱度唔夠,即 pizza stone 可以再燒熱些,如你的焗爐可以分開上下發熱,可以在尾後祇開下發熱多焗一些時間(如5到15分鐘)看看怎樣。
