These Sauerkraut Rolls are part of the special menu for Christmas Eve. According to the tradition at the table seven meals are served at least.
Each dish is vegan, no meat, eggs, or dairy.
The recipe is:
1 leek
1 carrot
6 tablespoons sunflower oil
250 gr. of rice
50 gr. walnuts
2 teaspoons of paprika
1 teaspoon of savory (thyme)
10-15 sauerkraut leaves
Salt and pepper to taste
Preparation method
Finely chop the leeks and carrots.
Wash the rice well.
Ground the walnuts into small pieces.
Heat the oil in a large skillet and fry the leeks and carrots for one minute.
Stir, add the rice, and fry over medium heat until translucent, about 1-2 minutes.
Then add the finely chopped walnuts.
After a minute, sprinkle with paprika, savory, a little salt and pepper.
Pour 250 ml of hot water and 200 ml. brine sauerkraut.
Let the rice absorb the water over low heat.
A V-shaped incision is made at the base of each cabbage leaf to remove the cob.
In the middle of a cabbage leaf, put 1-2 tablespoons of rice.
Wrap to make rolls.
Put them in a pot.
Pour in water, which should cover the rolls, and 2 tablespoons of sunflower oil.
Sprinkle with 1 teaspoon of paprika.
Put a plate on the rolls. Boil for about 40 minutes over low heat under a lid.
