All About Cumin
Cuminum cyminum
Plant Family: Apiaceae
Origin: East Mediteranian to South Asia
- A member of the parsley family.
-They resemble the seeds of other members of the parsley family such as caraway, dill, and of course parsley.
-The main producer and consumer of cumin is India.
- Cumin is used mainly in recipes that are highly spiced. It features in Indian, Eastern, Middle Eastern, Mexican, Portuguese and Spanish cookery.
- It is an ingredient of most curry powders and many savoury spice mixtures.
- It is used in stews, grill rubs, and goes especially well with lamb and chicken.
- It adds a little something special to plain rice, and beans.
- The seeds should be lightly roasted before being used whole or ground to bring out the aroma.
-Pairings: caraway, cardamom, coriander, fennel

Recently found some in the spice cabinet when I was rummaging around for ideas. I had been using ground cumin for years, so I was wondering how the seeds would be. I have a teeny-tiny pestle and mortar for spices, which I used… And wow, these little seeds were quite tough, but the aroma I got hit in the face with was surprisingly strong. I suppose I shouldn't have been surprised, considering how much can be lost when you store a spice as a ground-up powder. Something I've found to be useful for grinding some spices, is adding a tiny bit of salt after you've made as much progress as you can without it. I think it may help to act as an abrasive, and help the spice powder to stay somewhat separate, and keep from forming lumps in the mortar that resist grinding. I was actually looking at the color while grinding a different spice, and the thought hit me: I wonder if anyone else had discovered this trick. So I thought about how I did… I first used it to clean out my mortar, because there was some stubborn stuff in there. And so, another thought occurred to me: Is this how seasoned salt was invented? I mean… I know that salt was historically very valuable; so if someone uses it to clean out their pestle and mortar, they wouldn't want it to go to waste, so they'd likely just put that on their food, too. Then they think: Hmm, this is good! I think I'll save this for putting other food.

LeGourmetTV Recipes Awesome I'm going to check these out. Thank you! If you make a recipe database with a spice breakdown on each ingredient like the one you have here this will be my golden RU-vid channel LOL. I always wanted a good quick breakdown on spices with a little history and geography for perspective. This video is excellent! I search books for just this small piece of information. I will run these videos while I cook. Keep up the great work.

Cumin is the Eric Roberts of spices, if you try to use it on it's own, it's not great, if it's there with other spices it makes the whole spice mix fantastic.

Their related to carrots all of them in that family are including queen anne lace and are a host plant for black swallowtails.
