March Recipe: Mom's Sour Cream Chicken Enchiladas 24 white corn tortilla shells (Mission is best) 4 cups Monterey Jack Cheese (shredded) 2 cups chopped onion ½ cup butter ½ cup flour 4 cups chicken broth (1box will be enough, if it is slightly short just add a tad of water to make 4 cups) 2 cartons (16 oz. per carton) sour cream (don’t use light or fat free 6-8 ounce can(s) green chilies (buy them whole, wash them, and chop them yourself) 8-10 skinless boneless chicken breasts (boiled until done with 2 Bay Leaves and a few whole peppercorns for flavor) after cooking, shred the chicken breasts or chop them lengthwise In a large bowl or pan while chicken is cooking, soak the tortilla shells in the chicken broth to soften them. Sauté the onions in small amount of oil until clear and tender, then put aside to cool. Mix the shredded chicken, the sautéed onion and the shredded Jack cheese in a large bowl. Stuff the tortillas with the mixture, roll, and place seam down in largest baking dish possible or use 2 dishes. (must be about 3 inches deep at least, like a lasagna pan). In a large pan on top of the stove melt butter and carefully blend in the flour with a wire whip. Then begin slowly stirring and blending broth into that, making sure it stays smooth in consistency-add the 2 cartons of sour cream and the chilies. Add any remaining cheese, chicken, and onion mixture to this blend. Cook on low heat until just boiling. Ladle the mixture over the stuffed tortillas making sure you cover all the enchiladas, making them covered and creamy. Use all the mixture. Top with some shredded cheddar and cover with foil. Bake at 350 degrees for 1 hour. Uncover and brown for about 10 minutes before removing from the oven. LOVE the Show!

I'm from the South and you're causing me to potentially lose my Good Ol' Southern Boy card. This is Duke's Mayo country, but you convinced me to try Kewpie mayo last year and I haven't looked back. I've also been telling people to try it, as well. I currently have half a jar of Duke's in my fridge, but I keep reaching for Kewpie. I had a BLT with Kewpie just last night. Also, MARCH : BRUNSWICK STEW!!!! I want to see your take on the Southern classic Brunswick Stew!! It's made with smoked pork, chicken, and beef brisket. There are several recipes, but JIC, I'll post one here. Just remember that the smoked meat you use can be either pulled or ground. I've had it both ways, and both are equally delicious, but in different ways. Once you've smoked your meats, this is what you do... Ingredients 1 Tablespoon olive oil 1 medium yellow onion (diced) 1 red bell pepper (diced) 2 stalks celery (chopped) 2 cloves of garlic (finely minced) 1 pound grilled chicken thighs (diced) ½ pound smoked pulled pork ½ pound smoked brisked (chopped) 6 cups chicken stock 3 14.5 oz cans of diced tomatoes (with liquid) 1 ½ cups frozen corn 1 cup ketchup ½ cup of your favorite ketchup based BBQ sauce 1 teaspoon Worcestershire sauce Salt and pepper to taste Hot sauce to taste Instructions Sauté vegetables. In a large Dutch oven or stew pot, heat olive oil over medium heat. Sauté the onions, bell pepper, and celery until soft (about 10 minutes). Stir in the garlic and cook another 3-4 minutes. Add remaining vegetables. Slowly stir in the chicken thighs, brisket, and pulled pork. Pour in the chicken stock, canned tomatoes, corn, ketchup, BBQ sauce, Worcestershire sauce, salt, pepper, and hot sauce. Simmer. Bring the stew to a boil and reduce the heat to a simmer. Place a lid on the pot and simmer, stirring occasionally, for 45 minutes or until thickened to desired consistency.

NC here, and I would never have considered switching from Dukes, but bought a bottle of Kewpie today. Made fish for lunch with it today...delicious! Sam, what do you think of slathering it on a spatchcock chicken?

HOMESTEAD HALIBUT My grandparents homesteaded up here in Alaska back in the day. Whenever they got some halibut my grandma always made it this way and I keep the tradition alive with my kids! Halibut fillets cut into 1x2 in strips/chunks. 1 stick of butter melted and I like to add some smashed garlic and let it simmer 1 bag of lays potato chips smashed to smitherinees. Lightly season the halibut with salt pepper and garlic Toss in the melted garlic butter Roll in potato chips Spread evenly in a baking dish and then top with the remaining butter and smashed chips Bake at 450 for 7-8 minutes or until just flaky It’s life changing, you gotta try it!

I grew up in Chula Vista and I remember watching you on the local TV channel , 20 something years later now you’re one of my favorite RU-vid channels and still influencing my love for the art of cooking , you’re definitely one of the reasons why I got into this very stressful but very rewarding industry. I never liked or used mayo until Sam introduced me to Kewpie years ago on these videos. I can’t find it easy where I live. When I do find it, I buy several bottles at a time. My favorite is mixing it in when whipping up ad hoc sauces.

Kewpie is on my staples list. I literally finished one and opened a new one this morning. I use it with fish similarly to how you show with chicken. Coat in Kewpie, then light breading, then baked. Keeps flavor and moisture in. I'm trying the scrambled egg thing, because I make scrambled eggs very similarly to how you do it.

Kewpie is GREAT for camping. I use it on everything. Travels well. Easy to dispense. I’m a tent camper. And I use it in my Mac and cheese, taters, eggs, chicken salad etc. just bought a torch like that. My hubby loves shrimp. So I’ll make him some!

This was my most favoritest meal as a kid my mom would cook :) Bacon Cheese Noodles: -- Ingredients -- 1 to 2 Lbs of bacon depending on your love of bacon. I do 2 lbs of the thicc cut 16oz cottage cheese 8oz sour cream 1 box of rotini noodles -- Directions -- 1. Pan fry the bacon. When done, drain most of the grease but make sure to leave some / all the brown bits from cooked bacon (it's not an exact science). Let the pan cool a little. 2. Start the water / cook the Rotini noodles (dont forget to salt the water!) 3. While noodles are cooking you'll want to crumble the bacon and set aside. 4. Once the pan has cooled, turn on a low flame, add the 8oz sour cream, and continually mix as it slowly warms up. you should have a nice brownish / tan color. 5. When pasta has cooked, fully drain water and return back to the original pot. 6. Mix in the sour cream, cottage cheese, and crumbled bacon. Enjoy.

Sam one of my family's go-to recipes and probably my most shared recipes is the 10 min tortilla soup recipe. We saw you cook this on TV years ago and I share it at least once a week. March: make “the Sunday roast wrap” cook one flat giant Yorkshire pudding, sliced roast beef, mash potato/roasted potatoes, carrots, green beans, parsnips etc with a side of thick rich beef dipping gravy, you put all your preferred Sunday roast ingredients inside the big Yorkshire pudding and wrap it like a tortilla and dip away! you will not be disappointed and you will make it again.. trust a welsh man.

I learned of Kewpie from watching your channel, couldn't get it anywhere but found it in the Asian grocery store locally finally which is great. They definitely seem to be more mainstream now, Walmart has it and yesterday at Costco I found and bought a larger bottle. Great Mayo, definitely my go to now.

Started using Kewpie after watching your vids and have not looked back. Truly amazing product and to be honest, I don't even like Mayo, but this stuff is incredible!!

I have never liked mayo, however I ordered Kewpie because of your praise. Well, I like it. Pleasantly surprised!

Kewpie is great stuff, and mayo on fish is a great way to get a perfect crush. I have used it on baked Lake Trout, spread the mayo on top of the fish, and then add your herbs. It comes out the over perfect every time.

March : Pastaco (Pasta and Taco) Night This is a childhood meal my dad would make for us on “special occasions” and is, very uhhh, budget friendly to put it in a nice sounding way. Should qualify as a 15 under $15 also! This became so nostalgic i’ve shared it with others and is like Mexican comfort food to me. Taco portion: chop potatoes into hash brown square sized pieces, start browning ground beef of choice in neutral oil, season with a taco style seasoning, once beef is starting to brown add the potatoes to the meat, cook until beef is done and potatoes are soft, set aside on warm. Chop lettuce/cabbage, tomatoes and onions, and shred some cheese. Grab your sour cream. Pasta - in a large pot add one package (pound?) of medium sized shell pasta noodles with neutral oil on medium/high heat, mix pasta to brown (uneven is ok, adds character and depth of flavor, once about half of the pasta noodles are noticeably browned add water and boil, strain then add back into the same pot with tomato paste and tomato sauce. Add in salt and freshly ground pepper to taste (do not add any seasonings beyond that!). Once sauce is fully incorporated, serve on plate with shredded cheese on top to melt, add S&P as needed. Fill your taco shell (yes crunchy shell SAM 👀) with your meat/potato base about 40%, add about 30% for produce toppings, and use the final 30% for cheese/sour cream. Consume the tacos and pasta, heres the best part, the droppings from your taco shell, mix them in to the pasta on the side of your plate and eat that yummy mix up!!!

I'm very fortunate our local Walmart actually sells kewpie mayo. Absolutely awesome stuff! I've actually tried the eggs with the kewpie mayo. I can definitely attest to this!

Best biscuits...white lily self rising flour, buttermilk, lard or butter...keep the Kewpie away from my biscuits

I just purchased my first Kewpie, wasn't sure where to begin. Thanks for the ideas! I have used Blue Plate (iykyk) for years in instant mashed potatoes, they are so flavorful and everybody wants seconds!
