My winter Michigan ambient temps for February (now) with no heat running ranges from 65-72 degrees F on average in my kitchen which is more inside (no outside doors or windows attached or nearby). It could get a little colder if it's below freezing. It took me a 2 solid weeks to grow a ~1/4" thick x 7" wide pellicle. When it got that thick I pulled it for use as it seemed thick enough to handle at that point. I was actually surprised how tough it was/felt. No one has really mentioned that in any of the videos I've seen so far. And I've seen a lot.

I just found a new flavor in the big book of kambucha. Orange vanilla . I will try that flavor with this weeks brew.

I had better luck this year with my winter kombucha becasue I kept it close to the heater lmao. It worked great.

Hi Liz, I got a box of green tea yesterday as a gift, so this brew I used 2 green tea bags and 3 black tea bags. Hope it works well.

My local dollar general ran out of the organic black tea so I got lipton. Lipton is black tea you need to use 10 bags when you brew the tea.

Thanks for the tip. I hope that works out for you. I think I used Lipton once a long time ago but didn't like it. I do believe it was a flavored tea though.

@@KombuchaLiz yah, you have to look for black tea on the front of the package. Some lipton tea is mixed or earl grey those don't work.

Make sure you use enough starter tea. pH should be below 4.5 to start. If it's not, you need to add more starter tea, or some unflavored, unpasteurized store bought kombucha.

I got mold only one time. I noticed my brew jar was too close to my trashcan. I moved the next brew to my table and NO mold.

@@KombuchaLiz ginger seems to go well with lots of fruit. I like ginger and raspberry. Just bottled 7 bottles of apple cinnamon. That's my favorite so far:)

Hi Liz and thanks for all your videos and tips, so helpful, clear and encouraging! I spent my whole morning watching your videos and just got my first starrer kit. I have few questions for you or another Kombucha maker 🧋 What is a preferred ratio of tea and sugar in grams, water and starter fluid for a gallon of Kombucha? What do I do to grow a big Scoby baby, do I keep it in a Kombucha for longer? Does the mother grow also? How many Kombuchas I can make using the same Scoby mother? Can I make a new batch of Kombucha using a good ratio of tea with sugar and Kombucha but a small Scoby baby? Thanks so much for any answers and I am really looking forward to starting my home made Kombucha journey ❤️🙂

Hi Lina, I'm glad you found the videos helpful. I don't know the grams but I use 1.5 cups of sugar (about 300 grams) 1 gallon of water, 8-10 tea bags (depending on the tea and how strong I like it), and 1 cup of starter tea with a SCOBY. To grow a big SCOBY you could just leave it in the jar and let it grow (that will make sour kombucha). It could take a couple months. Or every time you make kombucha DON'T separate the baby from the mother. *****You DON'T need a big SCOBY to make kombucha. I know that's what all the pictures show but it's a lie. You only need a piece of SCOBY. When I've let my SCOBY get big I noticed less kombucha in the jar when its time to bottle it into smaller jars. Technically the mother doesn't grow but if it stayed at the top of the jar and the baby formed on top then it will grow. Don't be alarmed if the mother sinks to the bottom or hangs out on the side. That is normal. As long as you have a piece of SCOBY in the new jar you're good. Just make sure it's enough starter tea. For half a gallon I use 1/2 Cup for a gallon I use 1 cup. Some people use more Yes to your last question. As long as you have sufficient starter tea the SCOBY doesn't really matter. All great questions. Good luck. Hi Liz, just wanted to say that my first kombucha come out amazing and today I started a second fermentation. I divided it into 5 bottles and created different flavours in each: strawberry; strawberry, ginger and lemon zest; blueberry; blueberry, ginger and lemon zest; and ginger and lemon zest. Will let you know which one come out the tastiest in 7 days 🍋🍓🫐 Would like to add that I am also a very proud mama of a new the baby SCOBY! It come out thick and strong. Thanks for creating your amazing channel ❤️

Hi! Thanks for these videos, Liz! Quick question that I have seen so much conflicting information about. Bottle burping. Is it necessary to now have bottles blow up? I have seen people say you absolutely must burp every day and then other brewers say that you won't be able to get the really fizzy kombucha if you burp the bottles. What has been your experience and would you suggest? Thank you!!

Hi Leslie. This is a tough question to answer because each scoby is different so each person's booch is different. I think it depends on how long your f1 goes too. I've had bottles come close to exploding (bottle breaking) but they sat for like 4 weeks in the summer. If mine are in f2 I try to burp them once a week but usually forget

Ok gang and Liz,I took orange, half teaspoon of vanilla extract, with one teaspoon of honey. Poured this weeks brew into the 7 jars.this is a recipie dreamy orange from the big book of kambucha. It smells great. 2 days I'll tell y'all how it tastes.

Ok, I can not do more than one gallon a week. I did 2 gallons for the 2nd time and with MS, I forgot what gallon jar I bottled yesterday. Soooooo I had to bottle the 2nd gallon and dont know what one I already did. I may have bottled the wrong gallon today. We shall see.

@@KombuchaLiz wow I used banana strawberry juice by naked in the last brew and wow did it get extremely carbonated! Wish we could share pictures here. Today's brew was really carbonated when I took out the scobe so I could bottle.

Hello, I started my first brew, got a starter tea 2 cups and scoby from internet. My temperature was at 72 deg. The scoby was floating till day 3 then it fell, on day 7 no scoby but I had white bubbles. I thought it was mold I dump all the tea but two cups and scoby. I did not know what to do with it so I left it in the jar. Two weeks later there was a scoby on top and it looks good as well as the mother. Ph was 2.5. Taist a little vinegar. Can they be saved?

Hi Lynda. Absolutely! Your first batch sounds like it was fine. Kombucha and SCOBY can be tricky. I'll link you a video to check out that show scoby people thought was mold but they were fine. It's normal for the mother SCOBY to move around. I've had some that were sideways then one day they floated to the top. Once I had a mother that would float up and down the jar so every day it was in a different position. All is well. Yup, you are good to start another batch.

Hi Liz, I don't have a orange squeezer so I put 4 peeled oranges in my blender. The result was a clumpy thing can I put that in my kambucha?

You could. It might work better if you just hand squeeze the oranges or cut into smaller slices and cut the flesh out. I'm not sure if the white part of the orange will make it taste bitter. Lmk what you try.

Hey hi Liz, I was brewing for the first time, After 10days, I tasted my kambucha it was slightly sour but I also noticed that the new scoby layer on top was partially formed. so should I wait till the new scoby layer is properly formed. or just go with the taste or with the number of days, to taste my first ever brewed kambucha ?

Hi Stanley. You should taste it to figure out how you like it. Once you've made a couple batches you'll get an idea of how many days it usually takes. The SCOBY isn't always thick by the time the booch is done. Sometimes mine are just a very thin translucent layer. So don't go by that. I hope this helps. Lmk if you have more questions 😃

Hello, I don't have enough starter liquid for a gallon batch. Can I ad raw unflavoured store bought kombucha to my scoby and starter?

Hi Carla. Yes, you could definitely do that. I would let them sit out together for a couple days. Them being the scoby and started you have along with the store bought. Make sure it's a brand you really like.

Excuse-me, could we put an hermetic lid on the kombucha jar ? Or only a fabric ? It's because the jar was coming with a lid ;) Thank you !

Hello! 😀 no you do not want to use a hermetic lid. In the first ferment the jar needs air so the Kombucha can ferment. A cloth of any type, even a napkin or paper towel, will work.

I use it the same way as frozen fruit. You could also just use the juices.

I do. Usually I use a napkin because I can write the dates on it and I always have 1 on hand. But for 2 of my jars I use cloth napkins from Christmas Tree shop

hello hope your well can you pklease tell me. what happens if you add to much tea in your kombucha i got a new scobi it was very small like small with the starter tea but I got to excited and made a small scobi with the starter in a 8 l jar . now im really scared it will die on me 😅

Hi Anna. I am doing well. Thank you. How much starter tea did you have? And are you saying you put the SCOBY in 8 liters of tea? To answer you question it will depend on how much starter tea you had. If you could tell me in ounces or ml that would help.

@@KombuchaLiz thank you for getting back to me 😊 i boiled 24g of loose leaf tea and 1. 5 cups of brown sugar i had about 100g of starter tea. i didnt think at the time to be honest i was just really really excited and impatient 😫 now i look at am im like itis not going to make it. then i listen your youtube tips and you say it is really forgiving. so i wondering how forgiving it really is? and if it can be fixed?
