So what was the caliper bolt torque specs? It wasn't at the end of the video or description as said at 5:59. Knowing what thread pitch the rotor forcing bolt is would help, nobody mentions it.

Hey thanks for the video. How does one know if the rotors need "turned"? I don't have a tool and probably don't required new rotors. thanks in advance.

Does your pedal pulsate when you are braking? That's a tell tale sign you need new rotors or need them turned. You won't be turning them at home. And 90% of shops don't have brake lathes anymore. The other thing to look for is overall thickness. You can tell if they're heavily worn if there is a very noticeable ridge on the outmost rim of the rotor. Min. thickness will be etched on the rotor somewhere but may not be readable. And if you don't have a tool to measure them its pointless information to you anyways.

I purchased the PowerStop brakes from Amazon for my 21 trd sport. It says it comes with shims. Do I still need to keep the OEM ones and put them on as well?

Put the OEM ones in a Ziploc and keep them for the future. You may someday want to go back to Toyota OEM. You don't / never double shim a set of pads.

Can you compress both pistons on one side at a time without hurting the caliber or do you have to compress both sides of caliper at the same time? Planning on just removing old pads and sliding in new ones without unbolted caliper.

Will compressing the pistions one at a time damage the caliper ?

It will make the others pop out potentially. Then yes the caliper will be damaged

Can you replace the springs with a stainless steel wire wrap? Are the springs actually required or are they there just to hold everything together just like a piece of wire would?
