Have you considered getting a second rack for your toaster oven? If you put one in the oven above the first rack you can set sausages on the upper rack for better air circulation and skin crisping, then set a small sheet tray on the bottom rack to catch run-off.

Make any sausage you know will be tasty, smoke it, eat it (its pretty good) - then grind it, case it, throw it in the toaster oven, eat it (still good but whered the salt go?) - then grind it, case it, sear it, eat it (now its dryer than the slim jim sausage), and keep going until you get to "its inedible and i dont want to do this anymore"
