Serving size: 6 people
Ingredients:
2 lb pork spare ribs (cut)
1 can of coconut soda (Coco Rico in green can)
1 1/2 tbsp fish sauce
2 cloves garlic -- half for marinade and half for frying with pork
1 tsp shallot (1/2 of one) -- half for marinade and half for frying with pork
1/2 tsp sugar
3/4 tsp salt
1/2 tsp pepper
For caramel sauce:
2 tsp sugar
1 tsp oil
(If you prefer a darker color, use 1 tbsp sugar with 1/2 tbsp oil. You want to remove the sauce from the heat once it is very dark brown, almost black.)
For more tender meat:
Add a bit of lime juice to marinade & leave lid on for about 20+ minutes before removing to allow liquid to reduce
