@@SimonWoodburyForget Well, it depends on where you're from I suppose. In England, where shortbread is from I think they just use the butter and little salt is needed. But for making pastries, which for us is quite different as it's more flaky, then may be more salt is used. But shortbread is much more sweet and hard/crunchy because it's a biscuit and not a pastry.

For best results, use the 2nd suggestion, roll the dough into a cylinder and chill it before cutting the circles. It's also the least wasteful way to get the most out of the dough. One more suggestion? Begin by creaming just the butter if it's very cold. Then, once it's softer, you can add the sugar and it won't turn into a snowstorm! Same with the flour, add it in thirds, and not with the electric beater. You don't want to form any gluten! Great recipe. Thanks! I love shortbread cookies.

Try my mom's trick for shortbread- she uses corn starch instead of flour and adds butter and powdered sugar for the dough. They are very tender. She calls them Melting Moments.

These were pretty good and I'm not a shortbread guy. I had to add more butter and less flour in order to knead them properly but otherwise they were very easy to make. I even rolled the dough and froze it in parchment paper that I ended up cooking them on as well. Thanks for the post.

What I do with a dough of that consistency is, I scoop up a 15ml measure of dough then roll it into a ball and flatten it out with a fork.

Full Kitchen I used flora buttery. I’m from England so I usually have to slightly adjust the quantities when it comes to butter due to the temperature of my country which is normal. 🤗🤗🤗🤗

Why is the difference in thickness between rolling it out and cutting or freezing it in a log and then cutting rolling out with a quarter inch thick but when you cut the log it said three quarters of an inch
