The lady who made your first kind of dumpling JiaoZi was amazingly happy I guess after learning that you liked her dumplings. It was nice to see the people who made the food.

i LOVE DUMPLINGS!! this video makes me so happy. they are hands down my favorite chinese food. my mom makes the best homemade dumplings/ bao zi, from scratch, dough and all. eat with black vinegar, and some raw garlic (beware stinky breath afterwards. but it's worth it). xiao long bao is probably my next favorite. how i eat them is i nibble a small hole in the wrapping and then drip out the hot soup inside onto my spoon. i will then eat the xiao long bao and drink the soup separately.

In China we make a differentiation between 'jiaozi - 饺子' and 'baozi - 包子'. As a native English and Chinese speaker, I choose to also try to migrate this differentiation over into English by referring to 'jiaozi' as dumplings and 'baozi' as buns. On what basis do the Chinese make this differentiation? Don't ask me. I'm fairly sure that we don't have a good reason but here are some general rules in case you were wondering. Jiaozi are boiled or fried and oblong in shape but never round. They can sometimes be steamed (most often in dim sum) but they are never made with raising agents. Baozi are generally twisted up into a round shape and mostly fluffy because raising agents have been used. Notable exceptions to this rule are 'soup baozi' like Shanghai xiaolongbao or Xi'an tang bao. They are steamed, fried or even roasted but never boiled.

Oh the xiao long bao you are supposed to put it in the spoon and bite a hole in the side. Then slurp the "soup" out of the side... THEN you dip it in the vinegar and the hole allows it to fill with vinegar. It is then cool enough to eat!

After trying Shanghai Xiaolong, you should really try the Wuxi version (无锡小笼), which is larger, and features much richer/sweater soup inside. Unlike Shanghai version which the quality/taste is highly variable depending on which restaurant you go to, the Wuxi one is pretty consistent. (I'm a Shanghainese but I like Wuxi Xiaolongbao a lot, very satisfying). Also, Wuxi xiaolong is only available in Shanghai/Wuxi region, nowhere else in the world, unlike the Shanghai version. For Shanghai version, Nanxiang (南翔) Resturant sell the most authentic one, but you can find a good one pretty much everywhere on the street. For Wuxi version, Wangxinji (王兴记) is the most authentic place, you can also buy prepared/packed version which can be steamed at home. PS: people would notice that you eat the Xiaolongbao a whole, usually Chinese people prefer to bite a small hole and suck the soup out to enjoy it, unless it is no longer hot.

The main difference between the two types of dumplings, 小笼包 and 生煎包, is their wrappers. The thin wrapper of 小笼包 is, we call it, 死面, which is made with non-fermented dough. And the fluffy wrapper of 生煎包, we Chinese call it 活面, is made with fermented dough.

你应该多查查字典, dumpline这个词在英语字典里包含饺子, 包子, 馄饨, 烧卖, 和粽子。只不过饺子在西方更常见点, 所以当中国人听到老外说dumpline就会自然而然的联想到饺子。

I know this is a few years old and also I'm sure a few others more then likely have told you the same thing, but next time you have Soup Dumplings, place in spoon and take a small bit of the skin to release the soup in to the spoon. Blow on it then drink the soup, dip and garnish dumpling before eating. That is all.

The real pronunciation for wonton is actually hún tún, but everybody says it as hún dùn. I just looked it up and I'm so lost rn.. ANYWAY, I really enjoy both steam and fried dumplings, and I know I'm weird but I only dip steam dumplings with ketchup lol..If you have not, please go find shrimp dumping, it's Cantonese style and it's the bomb.
