When I was 6-7 yrs old we had a central theme every month at school we learned about and one of the themes was African culture. I remember we had Djembe lessons, serveral language classes, an African art class where we made clay masks and a wonderful cooking class led by African refugees who wanted to teach us about their culture as a way to thank our school for putting up a fundraise and collection clothes and second hand supplies for them so they could start a new life here in Belgium, the kids went to our school. I have very fond vivid memories about a snack they thought us to make: fried plantains w/ tiny meatballs and a spicy Pili pili sauce, but I can’t remember the name or the African country it came from… Ever since I just love plantain but I didn’t come across it again until I went grocery shopping in Brussels yesterday w/ a friend in a African/Indian/Asian food supply store 😍 I wanted to recreate the memory so I bought some. If anyone knows the dish I’m talking about let me know… I do remember we had to slice the plantain into 0,5cm slices and we fried them in oil until golden and crisp on the outside, we then sprinkled them w/ salt and I was instantly hooked…

To more ways to prepare them I like: 1 slicing green ones into very thin slices panfry them slightly so they gain a little color, than add a bit of liquid and let them simmer in it. The result is very light and soft in contrast to how greasy they usualy are. 2 bake yellow ones coated in coconut oil, a bit of sugar, cinnamon and cardamom. They get this cross and sweet coat that reminds me a lot of trying batter and are way tastier and less mushy inside than bananas would be. But most ti es I simply fry yellow ones totaly basic in a pan for Breakfast.

OK, I am very late in watching your video. I want to try making plantains. My question is if one plantain is one serving? Or is that way too much for one person? Sorry for this question but I am unfamiliar with this item but want to try it.

Hi there, in my home usually two plantains are sufficient for 3 ppl if we do the tostones (the flattened fried green plantains) However if you're having another side dish like rice in your meal then two ripe plantains would be enough for two - four ppl.

I was thinking take my own fried potato slices, onions and button sliced mushrooms, fry then sautte...cook up some basmatic white rice, add just a little bit of sazon, put it all together, seasons with black pepper and sea saly in layers of cooking process (not too much), fry up some angle cut pantains with smoked parika (minimal), mix it all together, put a few servings into several large ziploc bags, smoosh, then remove from bags, make flat circular patties with it all, then make that plantain puree at the end with nutmeg instead of cinammon, and dip the patties in the sauce, but still have enough rice and previous fried/sauteed potatoes, szon, onion, and sliced button muchroom made to have 2 meals, a rice main course, and some side dish of patties dipped in nutmeg/plantain sauce puree..and then, to really kick some ass...fry up some farmers choprize to mix with whatever of the two dished you want.

Wondering why the salt on the 2nd recipe...
@JerenesEats

It's a savoury snack thing. Especially our Caribbean snacks. Kinda like how salt is added to American Potato Chip products. However, if you're making it at home you have the choice of leaving it out right?

Can someone please tell me the difference (if any) between Plantain and Bannana?
@JerenesEats
@JerenesEats 3 года назад
Well one difference is when bananas are ripe they are more palatable than a ripe plantain. Plantains are usually larger, with tougher thicker skin and firmer. RIPE plantains are firmer than ripe bananas which is why we can fry them so nicely.
