Hey just a tip for your popcorn recipe. That small plastic condiment cup that you used has the amount that it can hold on the bottom of the cup. So if you look at the bottom of the cup it will tell you if you are using a 2oz or 4oz so no need to get the measuring spoon dirty.

The deep fry can cut time to less then half if you heat the cast iron in the oven first. You can do all your prep while pan heating so that when you take it to grill your all ready to go in minutes.

I’ve yet to cook on my Blackstone but I was looking forward to cast iron frying…but now you got me thinking to just use the foil pan. Great idea! Thanks 🙏
@JohnnyBrunet
@JohnnyBrunet 2 года назад
you are welcome thanks for watching. The cast iron worked and someone else commented that they preheat there's in the oven so that might be an option. I mainly stick to the foil pan now though. Someone said they use a wok as well in the comments. I need to try that next.
@bednar1435
@bednar1435 2 года назад
I stick with the cast iron for some safety “peace of mind” I preheat with a small butane torch and it takes like 5 mins to warm up the pan then put oil in and in 10 mins oil is at about 325. Prep time prior to start cooking will make everything flow smoothly The Blackstone becomes addictive I rarely cook in the house anymore. Have fun breaking yours in.
@JohnnyBrunet
@JohnnyBrunet 2 года назад
@@bednar1435 That's very smart I don't have a butane torch but maybe I should get one. I agree with the "peace of mind" thing that was why I initially tried the cast iron. Someone else recommended preheating it in the oven first then just using the griddle to keep temp. Maybe I shouldn't give up on the cast iron just yet. Now I just need to convince my wife that I need a butane torch :) thanks for the good info and thanks for watching.

@@bednar1435 that’s a great point in terms of the added weight for safety instead of a flimsy tin foil full of boiling hot oil can be extremely dangerous. Very valid point, thanks for your comment!

I like the honesty and realism of this video. Its polished but its not just a howto but also a hownot-to. Can you do a deep fried thick batter onion ring griddle video please? Most videos are either paper thin weak batter or they go from start, miss the tricky bit and tadahh! Shop bought onion rings!
@JohnnyBrunet
@JohnnyBrunet 10 месяцев назад
Thanks I'm so glad you like the videos. I'm not much of an expert on those thick batter onion rings either. I know they are hard to get that batter to stick. I think I saw someone soak the rings in buttermilk for like an hour once, maybe that will help. I usually just dip it in there real quick then go for the flour, but that doesn't seem to work well. If I figure it out I will let you know.

The best way to do canned cinnamon rolls on the griddle is to use a burger press and press them down as flat as you can. You won’t be able to get it super flat, but get it as flat as you can. You will let it cook for about a minute or until you get that sense that they are ready and you flip them and press them down again. You will then let that side cook and warm up the icing in the microwave for like ten seconds. You will use that as a sauce. It creates a pancake-like cinnamon roll. Its delicious. Definitely try this. Also thanks for all the tips. Edit: and then theres me who didn’t know that this channel existed until five minutes ago, liking it, subscribing, and scrolling through your vids and realing you already know🤦‍♂️. As always…love this video. Planning on starting my diet next week too, so until then, I have one question. What do you do with the used oil from your “shallow fry” cooks? How do you dispose it?
@JohnnyBrunet
@JohnnyBrunet 2 года назад
Thanks Chase! I let the oil cool down then keep it in a gladware container. You don't have to throw it away each time, at restaurants they'll use the oil in there fryer for a few before they change it out. And they're frying multiple things each day. Of course this depends on the restaurant and how much they fry. When I worked at outback we changed it every night bc of the bloomn' onions. Anyways I wouldn't throw it away until you've used it like 10 times or so because it's still good. When you do throw it away still let it cool down then pour it in an empty can or old two liter bottle and throw it away. Just don't put it down the drain.

@@JohnnyBrunet I worked short order and Yuppie venues.for years in Louisiana (North). We would rotate our fryers and filter the oil hot. It held very well. When it was burned out we would pour it over the "Slop" and the guy running the place would sell it to pig farmers in the area.

@@paulsherman7802 Oh wow that's super interesting. I worked at Outback for a year and we had filter four fryers a night so I know exactly whay you're talking about. @MikeInExile
@MikeInExile Год назад
@@JohnnyBrunet I was a manager at Burger King in a past life, and we filtered the oil every night after it had cooled down to about 200* (for safety reasons). When the oil started looking a little _too_ dark, we'd only replace about 75% of it with new oil. The reason we didn't replace it with 100% _new_ oil was because fries cooked in 100% new oil didn't _look_ right and they didn't _taste_ right either! So I use _that_ as a model/example for how I handle my cooking oil today! I always retain about 25% of my old oil to mix with the new oil. That way I get a good head start on the flavor/appearance thing!

If you really want to save time- you don’t have to coat them all in oil. The kernels in the hot oil will pop and the popped kernels stay on top of the uncooked kernels. Just a bit of science. The smaller denser particles will sink to the bottom whereas the larger, less dense particles will always end up on the top

If you have a outdoor griddle you probably have a burner set up to so if your dead set to deep fry on the griddle you can get oil a 25 50 degrees hotter say around 400 on burner then move skillet to griddle. Which I like that idea because it would be safer incase it spits or boils over a little then no big fire. Coleman makes a camp fire oven to stick on camp fires and wood burning stoves that would be perfect for griddle.

I find adding butter to oil-popped popcorn makes it too greasy.... so the best shortcut ever is to just use clarified butter as your popcorn oil. It adds all the flavor you don't have to add any butter after, just some popcorn salt and you're done, it's perfect.
@JohnnyBrunet
@JohnnyBrunet Год назад
Thanks for the tip Andri!
@MikeInExile
@MikeInExile Год назад
Butter contains about 20% water which will make the popcorn soggy when drizzled on it, so I recommend _not_ doing that. Instead, drizzle the popcorn with some additional clarified butter or ghee which doesn't contain water and won't make the popcorn soggy. If ya want to go all out and make 'movie theater' popcorn, do this: Use butter flavored _coconut oil_ to pop the corn, then drizzle clarified butter or ghee on the popped corn if so desired. Salt it with a product called "Flavacol" popcorn salt which you can find on Amazon (I've never seen it in any grocery store). Instead of drizzling clarified butter or ghee on the popped corn, try using that spray-can butter which you can find next to the popcorn in the grocery store. Pro tip: It might sound gross, but you can save some money by using butter flavored Pam cooking spray instead of the popcorn spray - it's actually the _same_ stuff (butter flavored vegetable oil)! Happy popping!

@JohnnyBrunet
@JohnnyBrunet 2 года назад
I've never tried it in the winter I would imagine that would make it very difficult to temp up. I would recommend waiting until it's warmer out. Did you use a foil pan or a cast iron? Also the more oil you use the longer it will take. I don't use that much oil anymore just what I need to get a fry, like half an inch. Try using a little less oil and waiting until its warmer otherwise you would need a ton of heat. Hope that helps man.
