In Sapporo, there were many variations of this available during the '83 to '94 period. Mainly they were each just a progressively diminished amount of flour in the sauce, until at last there's none at all. It was a personal preference of each different place. What I'm saying is that there wasn't just "thick & floury" and "thin & brothy" but also a whole range in between. I didn't get a sense of it the last time I was there in 2016 mainly because I was after the Wagyu beef & Okonomiyaki.

As a non-japanese who never set foot in Japan (I really want to!) I have to say I'm quite proud to say I recognised the background song playing in the shop where you had shio ramen.
