A couple of tips I've developed over the years. 1. Use a Thermomix / or food processor and make your onions more slurry like will improve overall texture and do try this technique to get onions caramelised it adds so much flavour (ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-rzL07v6w8AA.html) 2. I always add a cup of toor dhal to any curry to boost it's depth, and 2-3 black cardamon pods 3. If you have access to a pressure cooker, it can be done in 30 mins and best served next day, reheating on low for 1-2 hours. Also allows for skimming any fat 4. A cut of meat with bones, gives the best taste. I will often mix gravy beef and lamb/goat pieces with bones 5. When adding coriander, chop the stems up and add them too - they are good.
