Very important about the zest. My pies came out bitter, but I used a small cheese grater rather than a zester with lemons that had very thin skin. Also the speed of getting the meringue on the hot curd. My pie and topping separate and wept so badly. I had whipped cream in mind when adding the meringue. I got it in my head that it would melt.

I make amazing lemon curd yesterday and today realized I did NOT ADD THE CORNSTARCH FOR TODAYS PIES😩so we had lemon curd runny meringue pie lol…tasted great but not the end result I was waiting for …lesson learned…thank you for sharing these tips

Hi Shinee! Thank you for making this video. If I make Italian meringue does it need cornstarch and do I need to cover the curd while hot still? Does the lemon curd need the baking step in order to set properly?

But will the flour prevent the translucent appearance lemon meringue pie filling should have?

I don't think so. My filling still has that beautiful translucent look. If you go to my website, you'll see ton of photos of the filling up close.

Hello, my French merengue (perfect stiff peaks) turns in sweet omlet in the oven.😩What may be the problem?

Hmm, not sure I can picture it. Does the texture change? Does the meringue deflate and firm up like omelet? Unless you're reducing the sugar amount, the meringue shouldn't change its texture during baking.

In my opinion, it's negligible. I never had a soggy crust, if that's what you're worried about.
