7 UP POUND CAKE Use your brand preferences on ingredients Start in a cold oven (dont preheat oven) @ 325 for 1 1/2 hours or according to your oven. CAKE INGREDIENTS 3 cups of cake flour 1/2 of vegetable shortening crisco...or your preference 5 eggs 2 sticks of butter 1 teaspoon lemon extract 1 teaspoon coconut extract • (sometimes she adds a little more of extract about a teaspoon more) • 7 oz or 3/4 cups of 7 UP • 3 cups white sugar LEMON GLAZE - optional • 1 cup or 1 1/2 cups powdered sugar • 1 tablespoon lemon juice or fresh lemon juice • 1 teaspoon 7 UP MIXING CAKE -- mix well after adding each ingredient • Cream butter and shortening together • Add sugar slowly Do a bowl scrape down after each ingredient • Add eggs one at a time Do a bowl scrape down after each ingredient • Add flavoring extracts • Add mix flour & salt before adding to cake batter. • Then add flour mixture together into batter with 7UP (a little at a time) Do a bowl scrape down after each ingredient pour into pan. Racks should be middle ways in oven. Place in center of oven in a greased and floured tube pan. Once cake is done...cool in pan about 10-15 mins. Then turn out on rack and let cake cool rest of way GLAZE OPTIONAL 1 1/2 cup of powdered sugar Add 1 tablespoon of lemon juice a little at a time Spread on to a cool cake

Miss Maemae, I lost my mom 2 yes ago my dad a year ago today.. Been so lonely the past year, real depressed and angry! Today I thought how much my dad loved caked and my mom loved to bake and was a delicious cook!! I use to bake cakes for my grandkids before my dads passing to carry on my moms legend.. i COULDNT find it in me after my dad left, but today I remembered how much my dad and I liked 7up Bundt cake and thought; I’m doing this!! I got on you tube and found you! Whatever it was that lead me to you I sure am thankful!!! I felt a little bit of home again watching you, listening to you.. I heard my mom in your voice when you said “just beat that cake and keep it movin it ain’t no kinda big deal” you brought the smell of my moms kitchen back for a second!! She too loved cooking and educating a new cook!! Anyway, I can’t thank you enough for just being you in the kitchen as if we were at your home visiting!! You sure know how to make a person feel welcomed and loved!!
