Squash blossoms are so delicate, NO NEED to blanch them! I'm Italian, we cook these all the time in summer, and I've never seen anyone blanch the blossoms, you want them dry so batter will be crisp, not soggy. and you can easily stuff them without blanching first.

Hey! Thanks for the lovely squash recipes. I have Crohn's disease and cannot digest veg fiber very well. But squash are the exception and I eat some form every day. The soup at the end looks really tasty. I missed my favorite, spaghetti squash. Everytime you have a pasta recipe, since I can't digest starch either, I can sub with my lovely spaghetti squash. Thanks for your lovely videos.

I love your videos! To cut a butternut squash, with ease, break the stem off. Stand it up and make one quick cut, straight down. Super easy and safe.

I sometimes roast the seeds I’ve removed in the courser flesh around them in the roast vegie pan and it caramelises onto them quite delicious. ‘I’ love them but if I do it too often the fam starts to complain…. It’s a love hate thing. 🫤

squash grow in a water resistant container so leaving that intact will capture all the moisture inside while cooking and steam it. while grilling outside i usually just put a acorn squash on the grill and let it be until its black on the outside, the skin is burnt but the flesh will have smoke ring inside that goes from caramalized to steamed inside. easiest vegetable to cook in the world.

Thank you for these recipes, Chef John! If you folks want to save your fingers and a trip to the ER on a holiday, I couldn't recommend enough to use one (even two!) of these no-cut cooking gloves when cutting through these squashes. It can be a dangerous process. 😉🍁🍄🦃🥧🧡

Made the delicata squash. I was suspicious. It seemed too easy. But I had 2 delicata squash in my farm box this week so I decided to give it a go. The Pumpkin Spice Aioli kind of was the key. I am not much of an intuitive cook at the moment and would have preferred a recipe for the aioli but I had just made some mayonnaise so I thought I would see what happened. I took about 2 TBS of mayo and 1/8 tsp each of garam masala, turmeric and Spanish paprika. It was pretty fantastic. I am going to make it again tonight with the other squash. I ate it as a kind of snack while I was cooking another one of Chef John's recipes, Karniyarik, Turkish stuffed eggplant which was awesome (and I used to hate eggplant) One thing, my squash was smaller than his but still took a little more than 20 minutes. Definitely check the tenderness of the squash.

My brain is rebelling over the cordon bleu recipe….. omg. Thanksgiving needs to come… do you think a wee bit of nutmeg would do something happy? I will try it like that. Best thing about Thanksgiving… you can try new things and with all the other food, if it ain’t a fav, nobody goes hungry.

Try making the squash soup with Leeks instead of Onions (or 1/2 of each) plus minced Ginger (1tsp), and 1/4 tsp toasted Sesame Seed Oil drizzle, and toasted Peppitos on top.

I have never seen delicata squash in Food Lion near me. I went online and Wegmans which is about 5 miles from my house sells it. I ordered it today and will be picking it up. I am going to try your recipe. I like all squash. I have not found one that I do not like, I hope this will go on my like list

I really do love the idea of that cordon bleu, but honestly any recipe that shows me how to cut a butternut squash is actually showing me how to go to the ER with one fewer fingers than I had when I woke up. I can't even bench-press 20lb so pushing a knife through one of those things isn't happening. 😕 It looks delicious, though.

J- you can soften them in the microwave for 2-3 minutes to soften them, first. It’ll be easier to cut. 😉

Not a big fan of butternut or acorn squash. I was willing to try your recipes, but the links do not all give me a complete recipe. Some will give just the ingredients and no instructions, some links go nowhere. I really like a lot of your stuff and was hoping you could change my mind on squash, but I guess not.
