Really?!!!! Every restaurant I’ve worked in New Orleans feeds their staff even the ones that charge you a dollar per shift they at least give you something you know

Yeah it speaks volumes, I have worked in restaurants for about 4 years now and it's rare a place gives you free food let alone feeds you like family. Respect! It's a different pain cooking delicious food while starving yourself :/

Arnauds is a New Orleans institution. I’ve eaten here several times throughout my life, my great grandmother required we eat there every family visit to the crescent city with show our respect dressed in a nice jacket. Just recently dined there and it’s still such a great experience. They are a true example of New Orleans fine cuisine. ❤

The jazz brunch at Arnaud’s should be on everyone’s bucket list. Gotta experience it at least once. Lot of great food in New Orleans, but this is a whole different level. Incredible.

I'm truly impressed, especially with the way he makes his chicken stock. It's labor intensive, EXPENSIVE, and nothing goes to waste. That mirepoix is top notch, the leeks are a nice touch.

so true! you rarely see establishment using such quality ingredients to make stock in such a large scale, most of large scale kitchen nowadays are using stock powder for such a large setting. im nerding out when i see such a classic menu such as marchand de vin.

I absolutely adored listening to Chef Bobby's down-to-earth NOLA twang and getting to see behind the scenes at one of the coolest restaurants ever! Thank you for filming this piece, it brought much needed warmth on a cold and wet northern evening. There's a lot of places I like, but I like New Orleans better 😉

@@paolobrigante1761There are a lot of different dialects. In my decade there, I noticed plenty of them. The New York(Yat accent), isn’t really a New Orleans thing. It’s more of a suburb thing. Metairie, Kenner, Chalmette. Uptown has its own accent as well. It’s definitely a more southern accent.

Love the atmosphere of that kitchen. Lots of pride, respect for the culture, not trying to be something they're not. All can be said about Bobby to. He's a vital part of what makes that restaurant great, and love to see everyone being treated like family, on top of that he actually has family in the business. As a business owner you can't ask for anything more.

I have been to Arnaud's. I will tell you, without hesitation, it is one of the BEST MEALS I've ever had!!! The sauces and flavors are absolutely delicious. If you are ever in NOLA, do yourselves a favor and go there! Also Jazz and great cocktails!

Talk about outstanding quality . Instead of just using the bones for their stock they literally use about 30 whole chickens. Unbelievable to put out that many covers and have top notch recipes .

It's such a unique business to be in . You are in essence a production factory , but what you produce is only in existence a short while . It takes an incredible amount of planning , coordination and VERY stressful labor to produce it and then it's gone and you clean up and start it all over again. Short of pictures and memories there's no record of what you made. I was in it about 8 years , mainly as a line cook , then became a house painter . At least now when I am done theres something to look at for 10 years or so. But there's a sense of adventure to food service that's kind of hard to explain that I miss.
